I think TAFE run some courses or you could google for the correspondence ones. There are also heaps of websites that have really good tutorials. Digital Photography School one. Photojojo is another.
I`ve been wanting to do a photography course for my own benefit for sometime but not sure what would be the best course, I`m thinking maybe a correspondence course?? but really have no idea.

Just send an email to the AIPP. I sent an email to them when I was interested in doing a course, they told me three places in Melbourne known for running quality courses, so I can't help specifically, but they would know the best ones for you.

Have a look at your local community centre. Someone might be running a beginner photography course where you can learn the basics. I did that and it was enough for me to know how to use shutter speed and aperture properly and experiment from there.
Also talk to your local photo lab. They are usually enthusiasts and may have details about camera clubs you can join. My local camera club is awesome! It runs workshops and has competitions and expos. Very inspirational!
