My DS2 loves cars, puzzles (easier ones with pegs handles), reading books that have lift the flap, musical things, he loves his little tikes piano thing, dinosaurs, dress ups.
DS1 is into trains, dinosaurs, nature,perler beads, go go's, books, leggo, he is getting into sport things like football, skipping, soccer, cricket, which encourages DS2.
My DS2 who is almost 3 and a half loves Thomas, Matchbox Cars, Disney Cars and anything that involves role play... so he loves little Dr's sets, tool boxes, cooking sets etc.
While I have a 3-5yo girl, my nephew is the same age and he and DD play with almost identical toys.
Both love;
'home' stuff - cooking toys, cubby houses, babies (I know many dads are against this but my nephew and my DS both love them) and strollers/cots etc
play dough
construction anything - lego, paddle pop sticks and sticky tape, scrap paper scissors and glue, cereal boxes/cardboard rolls etc
crafty anything
musical instruments
balls of all shapes and sizes
gardening tools
bikes/scooters/outdoor toys where they're active
puzzles
blackboard and chalk/large chalk for concrete

Is this a gift? Or are you trying to build up a collection of toys which will last a three year old for a few years?
Blocks are good as they can use them in more complex ways as their imagination and dexterity matures.
My DS4 (almost 5) loves balls, Megablocks, Thomas the Tank train tracks and accessories, anything Buzz Lightyear and TOOLS. Any sort of tool. My DH helped my DS build a kid-sized 'woodwork table' where he nails, hammers, measures and screws to his little hearts content. The table is pretty cool, it has holes for the tools, containers for the nails and screws and stuff and a vise to hold stuff. Wood offcuts are available all over the place and he adds bottletops, corks, gumnuts, sticks... you name it! He does have real tools at his woodwork table and we've never had any problems (only hand held though! No electric tools...).
Lol, tools are a popular one. Garden tools are good. Including pretend mowers etc.
You can get drills, saws, grinders, tool benches, all sorts of things these days.
Motorbikes & cars....DS is obsessed!! Hotwheels, trucks, tractors, Thomas, Diego, scooters, bikes, boats & lego.
DS has a Mega blocks pirate ship & loves it. He also has mega blocks, so can put all sorts of blocks on it, lol.
I agree Rebecca! DS is obsessed with Toy Story at the moment and has a Woody, a Buzz and Slinky in the large toys which he got for his 4th birthday.
He is also into playdough and blocks.
My DS (3) likes: Duplo, Lego, jigsaws, Snakes & Ladders, Dominoes, his toy toolkits and workbench, my piano, hungry hippos, cars, brio, any sort of train really, toy animals, blocks, magnets, drawing, cooking, his toy kitchen, water play, gardening, tents and hiding.
TV-wise, he likes Thomas, Wiggles, Bob the Builder, WotWots, Roary, Tractor Tom, Chuggington, Cars, Incredibles and Mamma Mia. I'm sure he would love anything related to those as toys as he likes pretending he's characters from those shows and dresing up like them.
DS1 is obsessed a bit with Buzz at the moment also, he also loves CARS and driving his little die-cast cars while watching the movie... re-enacting the race. There are buzz dress ups & wings that you can get that are great fun. He also loves to do floor puzzles. He's loved Thomas since he was about 2 and still enjoys playing this his trains and tracks also.
