Hi Antheia - I am by noooooooooo means an expert but I have learnt this much!
All of the items you've listed are nappy covers in some guise;
Soaker - wool/knitted nappy cover, lanolised.
Longies - wool/knitted long pants, lanolised.
Shorties - wool/knitted shorts, lanolised.
Flongies - fleece long pants.
Why use any of the above as opposed to your 'traditional' nappy covers? The short answer is they breath better, lessening the chances of uncomfortable nappy rash, and instead of holding in all the moisture like a PUL (or plastic) cover does once the nappy is soaked, a wool cover will absorb it & some will naturally evaporate from the outer, while with the plastic cover the moisture/liquid has nowhere to go, pools around the leg gussets (or anywhere it can get out really!!) and leak.
I use fleece covers EVERY night & they are fantastic!
