I usually use the Cream Anglaise (sp?) recipe for ice cream, it makes a creamier ice cream. Then I just add fruit of some sort whether it be strawberries or stewed rhubarb. I then put it in ice cube trays in the freezer for a few hours. It usually sets really well, then I pop it back in the Thermomix for about a minute to make ice cream!

Boo @ ice cream. Too much salt? I would try the ice cube tray as there's less volume to freeze. So it won't take as much energy if it's a problem with the freezer.
Today I've made latte's and hot chocolates. Boiling eggs for sandwiches for lunch and I'll be making pasta dough for PeeDubs Cajun Chicken Pasta and making Custard, Choux Pastry, and Mars Bar sauce for dessert. The awesome thing is even though I'm making all this food I'm not going to town on it. Yay me. DH wants to make yoghurt tonight too. It's getting a work out. I think it always will because there are so many cheaty things we'll use it for daily even if we aren't cooking mammoth meals in it.

All I did was break up 3 mars bars, and added about 100mls or so of cream and put it on speed um 3 about 50 degrees for about 5-6 minutes. If the nougat is still slightly lumpy just turn it up to 5 at the end to mix it thorougly.
I really need to remember writing down what I do, I have converted recipes but not actually written the method down :/
Today I've made ricotta - amazing - cheap and easy! Great way to use up excess milk/cream. And then I made pasta dough and rolled it up between go between and stuck it in the fridge so DH can make cannelloni when he comes home. I'll make up the spinach and ricotta mix for him and he should be right to do the rest. We're using up leftover passatta that he made on friday for pizzas. I've made a whole meal out of what's in the fridge. LOVE days like this.

Haven't done anything too exciting past few days. Made up a batch of Harissa Paste with the chillis from garden. We have four basil plants growing out of control so going to go and pick it all and make up & freeze pesto, so an easy dinner for those lazy nights.
Got a batch of GF bread just about ready to go into the oven. Need some motivation too cook up some more things but a have house that looks like a cyclone has gone through (thanks DD) so better sort that out.
Ricotta - yeh how do you make ricotta I have cream & milk :)

Google Super Kitchen Machine Ricotta and you'll find the recipe. That whole site is a wealth of info. Seriously the ricotta is so easy. And don't be put off by the idea of cheesecloth. I didn't use any. Just an old ricotta sieve and it worked perfectly. The recipe says it makes 350g but I got close to 400g.

mmmm the ricotta is sooo easy and tastes fantastic, I took some I made yesterday to my mums where we have a weekly dinner and the biggest food critic (my SIL) loved it and said it tasted like the shop stuff :D

I made Dulce de Leche last night :) It worked perfectly... took 50 minutes, and I got nearly 2 jam jars of it. Am going to make another batch minus the brown sugar and just with white sugar to see how it goes, as this is more traditional.

Can you use dulce de leche as an icing or is it more of a filling?
You know one thing I really love about my Thermomix? Being able to just chuck it all in the dishwasher when I go out so it's shiny clean when I get back, ready to make my next creation.
I need to bake for a lunch on Sunday. Do you think I could make raspberry cream cheese brownies on Saturday for Sunday? Using GF flour. I'll be making more lemon coconut slice too.
I'm wondering if I can make the brownies using beans....

I absolutely think you can. In fact I think it would taste better as everything would amalgamate for extra noms.
You could probably beat dulce de leche with butter for a caramel frosting but I'd probably use it more as a filling.

What recipe did you use for dulce de leche? I've googled and found a few. I only have raw and brown sugars though.
Whilst googling, I came across this recipe for lemon curd ganache:
Zest of 3 lemons
160g. lemon juice
160g. egg yolks (turned out to be 8 egg yolks)
100g. sugar
180g. soft butter
650g. Callebaut W2 white chocolate
Add everything except the chocolate to the Thermomix. 4 min. @ 90C - speed 3 then scrape. Then another 3 min. @ 90C. This is the lemon curd part - delicious on it's own.
When done, cool to 60C in fridge. Add chocolate. Process approx. 45 seconds speed 3, then another 45 seconds @ speed 7. This is the lemon ganache. Exquisite!
I'd use the butterfly for the curd. This was from 2009 so they may have been using the T21.

I did 1.5kg milk, 190g white sugar, 60 g brown sugar, 200g cream and 1/2 tsp bicarb...
I'd just do 250g raw sugar.
I also boiled the jars and lids, and because the mixture was SO hot and the jars were SO hot the full jar popped down the air tight thingo and sealed completely so it's safe to fridge for a while :) YAY!

Thermomix Dulce de Leche
Ingredients:
1 litre milk
220g sugar
100g cream
1/2 teaspoon bicarb soda
Method:
Place ingredients into TM bowl and cook for 45 minutes on Varoma temperature at Speed 5. Place basket on lid with an open-weave cloth to allow it to evaporate without spraying mxiture all over the room.
When finished, quickly pour into jar and leave it to cool. When it cools it will be nice and thick. Keep in the fridge

Yep. I'm worried about burning the bottom of the TMX. Did yours burn? What speed/temp did you cook it at?
I could probably have a nap in the time it takes to cook. Did you have to scrape down regularly?

No it didn't burn. I wouldn't leave it though. Keep an eye on it in case it bubbles or spits. Mine didn't but I've read some people have problems. Being hot sugar and milk I wouldn't leave it unattended JIC. Coz it would be MESSY! I did it on Veroma temp.

Ooohhh that sounds so good and yet so bad!
Just whizzed up some cake pops this afternoon in the TM. Awaiting dipping in the fridge - my first attempt.
I made the chocolate cake in the EDC but with GF flour and it worked fine.
And pumpkin soup is cooling on the bench. I didn't peel the butternut pumpkin and it is still smooth and delicious.

Yeah. If I nap, I'll come out to burnt milk and sugar all over the place. If I don't, it will be fine :)
Need to boil the jars anyway and I'm not going to leave them unattended either.

Just saw a recipe where they added dollops of dulce de leche into chocolate brownie mix. Seems there's a ever ending number of ways to use it.
Bloom - I would not have thought to leave the skin on pumpkin. That would save time & effort

Following on from the lemon curd ganache idea above, could you make a dulche de leche ganache doing the same - adding white chocolate and blitzing together? I'm thinking of making it as a topping for the magic bean choc cake.
Rouge - you see what I mean about having ideas when I don't know a thing about food tech?

I would do it the way it said. White chocolate is very delicate and can split easily, so there might be a reason why it says to do it this way KWIM?

Currently have more magic bean chocolate cake in the oven. I added dollops of dulce de leche throughout the mixture when I was pouring it into the tin. I hope it turns out alright. I've decided to decorate with a white chocolate ganache, which I hope I can make in the TMX. Is white chocolate much different to cook with than normal chocolate?
Then tomorrow, if I have time, I want to make spun toffee to decorate the cake with. It's for a birthday, so I'd like to make it special. As I've never made toffee before and don't have a candy thermometer, that should be interesting. Would it be ok to make the toffee today or will it go soft before tomorrow?

If you keep the toffee in an air tight container it should be fine.
White chocolate isn't too difficult it's just softer and can split because it's more delicate. But I don't imagine it would be a lot harder.
You'll find most White Chocolate recipes contain more white chocolate than milk chocolate recipes. So make sure you don't substitute a milk recipe for white, unless you use more white chocolate. For decorating I normally do 3 parts white chocolate to 1 part cream.

I have the white chocolate ganache cooling ATM. I added 500gm white chocolate and 190gm cream (not thickened). I was going to add another 190gm cream after it cools and whip. I might add a bit less. It will cool overnight then I'll whizz it again if needed.
I've also made more lemon coconut slice. I made 1.5 times the recipe - 12 eggs and 7 lemons!! But there's enough to keep some and take some.
I'll make the toffee tomorrow. It's humid today and I'm a bit footsore from all the thermomixing :) having a cuppa and watching telly, before we work out what to make for dinner.

So the dulce la leche, you use that for icing, filling that sort of thing? And how is it different to a ganache?
I tried quirky jos caramel custard the other day - sub'ed corn flour, soy milk and organ egg replacer - came up a treat & everyone loved it. Just didn't look so fab (blame the soymilk for that). Have also done the gf focaccia too - was nice fresh but no good later, so think I'll make a very small serve next time.

Well the toffee didn't work. Wasn't hard enough so I obviously didn't get it hot enough. But the white chocolate ganache was yummy. I don't know that the dulce de leche added anything. But it was yummy overall. I now have left over ganache and dulce de leche so I need to come with an idea to use them up. Any tips?

I just eat the dulce from the spoon, but we've been good. I haven't opened the sealed jar. We'll be opening it on Tuesday... going to make some dulce de leche chocolate lava cakes for V Day dessert :) Stole it from PZ on pinterest.

I made Marmalade & Oat Muffins this morning for breakfast (ran out of fruit so improvised). I use Stephanie Alexander's recipe. They worked a treat. It was a OMG we've run out butter, and didn't have time for a big gourmet breakfast. So then later we made Quirky Jo's Butter Spread. Worked a treat. We normally get spreadable butter, as I'm an anti margarine kinda gal. But the Spreadable butter is delish. I'm going to make cultured butter next time and turn that into a spread and see how yummy that is. Also trying to source cheap cream in bulk so if I find some I will let you melbournites know. I can't believe how easy making butter is!
Tonight I'll be making school snacks, and yoghurt finally. Tomorrow I'll be doing duck confit... Hopefully it works *fingers crossed*

I made the creme anglaise the other day. It tasted lovely, but it was lumpy, I assume the egg yolks scrambled? I wonder if it's because I keep my eggs in the fridge?

My thermomix arrives tomorrow! I am so excited I don't know what I will make first!!!
My DD has Coeliac Disease so I will be using mine for Gluten free everything. She has a very intense yoghurt obsession so that will probably be one of the first things I try.

Ordered my thermie two days ago!!! Can't wait! I will need help to make sure I use low fat recipes, cos a gf of mine who is doing weight watchers and who has a thermie reckons that most of the receipts are high in fat.... Ideas anyone? DH and I need to lose some major kg's!

Bella - it does appear that a lot of recipes are lovely desserts or bread stuff!
Most of my friends gained weight when they first got their thermomix - I know I did lol
The custard isn't too bad calorie wise if you make it with skim milk and you don't eat the whole lot in one sitting lol

It's as healthy as you want to make it :) There are LOTS of healthy recipes out there. And once you get the hang of it, converting recipes is a breeze.
I actually find more healthy recipes than not. Quirky Jo's blog has some fantastic healthy recipes. So don't be put off by the EDC, as it is that Everyday Cooking for the average person.
Since having my TMX for nearly 3 weeks I can say my family are getting spoilt yes, but also I've been able to cut out the last remainders of "fast food" and "prepackaged food" as before the TMX I mostly cooked from scratch. And now I'm able to cook from scratch in areas I never thought possible. Like homemade dairy products.
Just remember the cookbooks are there to teach you how to cook with your TMX. But you can do the rest. If you want to eat healthy you can... you just need to give it a go :)

Potato Bacon & Onion Soup tonight and Irish Soda Bread. Then making some more yoghurt, cheese out of the leftover yoghurt and more dulce de leche. DH was sad I used it all in a cupcake recipe for a friends birthday. Will make more butter tomorrow. And a whole heap of lunchbox snacks. Will be getting a workout. Going to do some chickpea choc chip cookies and the red bean chocolate cake. As well as some cheese and bacon rolls and some muffin quiches. Will do a carrot and zucchini slice too and some cheese crackers hopefully.
