Olive - have you found you're using the umami paste much? I kerp meaning to make it, though without nuts. What do you use it with? I haven't been using the vegie stock much recently either, but we're eating more salads etc

I've made yoghurt before. It's easy. I did buy a $20 yoghurt thermos thingy at IGA. I make the yoghurt in the TMX, pour into a sterilised jar. Put the jar into the thermos with boiling water and leave overnight. Similar for cultured butter. Heat yoghurt & cream in TmX. Culture in thermos overnight. Pour back into TMX in the morning and make butter. It's so yum and you end up with cultured buttermilk as well.
I'm going to do the thermoserve one, have you seen that recipe?
L&B - the magic bean cake was awesome, a hit with DD and also my brother. I could only find 400gm tins of beans and it worked out fine.
Rouge - First thing I made was mushroom rissotto as that is a guaranteed hit with DD and means dinner gets eaten without any arguments, I also made brandy cream anglaise to go with our christmas pudding.
Yesterday I made chocolate marble italian meringues with left over egg whites I had from making icecream mmmm they are delicious with a soft goey marshmallow middle. With the icecream recipe from EDC does anyone else find that it melts so quickly and goes abit watery but it does taste so good, I have been making it with vanilla beans.
Just saw a new link to choice comparing the thermochef with the thermomix - we won :D Was an interesting read (not sure if can link it, so haven't). Actually to be more precise they said this:
Has anyone made Cyndi's GF bread? I made it the other day and I'm a bit disappointed with it - bit tasteless & sank in the middle. Any thoughts? I did sub for the egg & the apple cider vinegar tho - dunno if that played a part.:
Like the Thermomix, the Thermochef is great for a busy family or less experienced cook, saving time and promoting healthier cooking - but it doesn't impress us as much as its rival.
It performs very well for cooking but just isn't as easy to use. Although you'll pay substantially more for the Thermomix, that is a product whose quality justifies its high price tag.
Rouge - congrats on your new arrival! I think the first things I made were vegie stock paste, mushroom risotto & custard :)
L&B - thanks for the egg subs list. I had seen that before but kept forgetting. I did the fruity dream with chia seed and there was no way you could tell there wasn't egg in it! Awesome!
btw for anyone using pinterest, I've started a pinterest folder for thermie recipes, it seems a good way to keep them organised online - PM me if you wanna follow me (not that I have many pinned yet lol).
Belfie - my TMX consultant also suggested using coconut milk as an egg replacement in the fruity dream.
Belfie - I've made that bread, but using the Quirky Cooking adjustments. I havn't tried subbing egg or ACV though. It's one of the best GF breads I've ever eaten. Pity it didnt work out. What did you sub with?
Rouge - dont think I've seen the thermoserve yoghurt recipe. Sounds interesting. I once tried making ice cream in the thermoserver. Doh! Wondered why it didnt set.
Phoenix - I do find the EDC ice cream icy and it stays softer than normal
Ice cream. As mentioned previously, you can get more ice cream headaches with it too. It's probably related to the absence of preservatives & additives.
So excited to find this thread, I have had my thermomix for a couple of months now, but still feel like I haven't quite got my head around it.
I have made the most amazing rhubarb icecream in it though :)
It's arrived :D YAY!
So what have you made so far??!!
Nothing yet. I have to go do some stocktaking for work in about an hour... so I want to wait till I get back.
I'll be making yoghurt tonight and setting it in my thermos' as I don't have the thermoservers yet.
The kids will probably want smoothies. I'm excited about the baking powder! <--- Yes I'm a weirdo.
Quick question for those who have made the GF Artisan Bread from Quirky Cooking..........where did you get Sorghum flour, I've tried 3 health food shops and an organic shop but noone stocks it.
Thanks Mrs NB have checked there too :( but my local coles isn't overly big. Gonna check out the local indian and asian grocers this morning.......of course because I'm desperate to try making it there is just ONE thing I can't get my hands on, I haven't eaten bread in nearly a month and it's been killing me, that and no pasta - it's a form of torture with my italian genes lol
OK so far I've made:
Chocolate Custard
Porridge
Not very exciting... but I need to do grocery shopping.
Tonight I'll be doing Hainan Chicken Rice (as I can steam the whole chicken WOO) and profiteroles. (two of DH's fave so he's ecstatic). OR I might make yum cha style mango pudding... we'll see.
I vote for yum cha style mango pudding!
Stalker! :p
Yes, I am. Especially since I'm going to be over at your house for dinner tonight.
Love,
your friendly neighbourhood creep
Lol! Well Dh says that's fine :) so all good. See you tonight xx
Sounds great Rouge, where are you getting that recipe from?
So I'm thinking of going Paleo, and I think the TMX will be of great assistance with this......however, I haven't started it yet...
DH made the iced coffee in the TMX yesterday, and omg it was crap.. LOL.... I think you really need GOOD coffee in it, not just the cheap savings brand granulated coffee from Coles......
Probably going to make a sorbet today, its so darn hot up here - my favourite I reckon - orange.
Phoenix - I buy sorghum flour at my local indian grocery. While I'm there, I pick up spices for Indian cooking too. Sorghum is also called jawar flour.
Mrs NB - check out the Eat Nourishing food websie. It has some great paleo/ GAPS recipes. Including the lemon coconut slice I mentioned in your other thread. It was easy to convert, though it did include 8 eggs. The topping is similar to lemon curd in the EdC so I just followed those instructions.
Both I googled! The mango pudding is from the official site. Hainan chicken from a blog a googled. Also doing cookies and cheesy mite scrolls for the freezer for school lunches. And I have a billion other things to do. The TMX could save my life today...
I found it!! The little Indian grocer round the corner from home and at $2.19kg a bargain (considering one health shop asked if I'd be willing to pay $100 for it as that is how much it would cost to get it in WTF), I have a half batch resting as I type - thought the packet of tapioca I had in cupboard would have been enough and didn't realise you needed so much...........oh well should still get two loaves out of it.
oohhh everything you guys are making sounds so good but I have a major case of CBF'ds today so bread is all the use my thermie is going to get today, dinner tonight is at mums which is great as I don't have to cook at all :D
$100 per kg! What a nong! I've found some great stuff at Asian and indian groceries since I got a TMX. I need to find a cheaper source of coconut oil, as I'm paying over $20 a kg at health stores. I just need to venture outside my comfort zone and go looking for it. I bake my bread on a pizza stone. So it's crusty on the outside and soft in the middle. Best served with homemade butter. Noms.
Btw - the Orgran pasta at the supermarket is gluten free.
I have 4 bananas going mushy so I'm thinking of making some GAPS muffins with them, though I also have the cbf's. Also DH is working from home today, so I dont want to disturb him. The TMX is really noisy.
Lamb roast at Mum's tonight. Cannot beat it:)
Yummy success - just made ice magic in TMX. I'm stupidly chuffed such a simple thing works. Now to make more ice cream. We just ran out.
I havent made ice cream yet... I made pineapple sorbet tonight - didn't quite work....
Omg omg. Dinner was awesome! Happy happy joy joy!
Yay! Your cooking sounds delish Rouge!
Yesterday, I whizzed up my protein shake, iced coffee and playdough in my TM. I also made rice cereal from scratch (not the instant stuff you get in the baby aisle) and steamed some chicken breast for DS2. Oh and I also made pumpkin soup - very nice and smooth!
The playdough was really good! I made a double batch and it strained a bit to mix it, but it is a great consistency. I should have made two separate batches and mixed the colour in from the start though, as that would have saved me time kneading it in.
Today I'm making Cindi's GF bread.
Bread turned out OK, it's yummy but a little flatter than what it looks in the pictures, it looks like a real loaf on quirkys website - maybe I didn't make into a proper "ball" shape but will give it another try or just make biggers loaves.
Ice Magic!!!!! You'll have to share that recipe too L&B I love the stuff and have just run out of it.
Work for me today so no time to play, going to be struggle enough to work out what to cook for dinner, really wish I was more organised sometimes.
Made Banana & White Chocolate Muffins. Pretty good but I think they are more like cupcakes. So next time I think I'm going to make Stephanie Alexander's recipe and convert it to TMX myself.
Ok. I have 2 egg whites left over from making ice cream. And 4 bananas going way past ripe. Give me some ideas on what I can make.
Phoenix - the ice magic recipe is on the thermomix forum:
I poured mine into a glass jar. I hate using plastic for hot things. Also, it will be easier to get the dregs out at the end :) I did cook mine for about 3min and didn't use the peppermint essence. It was lovely.:
Ice Magic TM style
« on: April 25, 2011, 07:45:12 AM »
Name of Recipe: Ice Magic TM style
Number of People: Depends how much you like on your icecream
Ingredients:
100g dark choc (I used dark cooking choc as it was all I had but I would choose 70% in the future)
50g milk choc ( I used green and blacks milk choc)
5 tspn/20g cold pressed organic virgin coconut oil
1/4 tsp peppermint essence or to taste
Preparation:
Break up chocolate place in* and mill on spd 8 for 10-15 sec
Add coconut oil and set TM to 2min 37deg spd1 after 1 min scrape down, add peppermint essence and continue for the remaining min at spd2. This was all I needed to melt and combine but melt for longer if needed.
Pour into a squeezy bottle (I used a BPA free Decor brand bottle i bought at BigW) and serve drizzled over EDC vanilla icecream.
STORE IN THE PANTRY - not the fridge!!
Recipe based on Thomas Keller's topping recipe
Tips/Hints:
The mixture does (like store bought Ice Magic from what I can remember of it) go firm in the colder weather so just sit the squeeze bottle in some warm water to make it sqeezeable again*
Today I made salted caramel maple ice cream, also from therm forum/ Tenina, and a batch of coconut ice cream. Now contemplating GAPS friendly banana caramel muffins.
T the ice cream recipe I use you have no left overs!! Do u want that recipe?
As for the whites freeze the bananas and make fruity dream tomorrow night!!
That would be great Olive. The maple ice cream used the whole egg, but I based the coconut ice cream on the EDC which just uses egg yolks.
I'll make banana bread & muffins tomorrow.
Cool will post tomorrow when on computer, otherwise google Annabel lanbein, I use her ice cream base for all myicecream and go from there. The 'custard' part I also do in the tmx with butterfly on 50
We had the sausage rolls from quirky cooking tonight (made saturday and froze) Yum!!
DH made Normandy chicken and mash last night. I haven't used it yet but I'll probably do pizza dough this afternoon. Might make some sort of cake today for afternoon tea for the kids. Made DH an iced coffee last night (my recipe from what I used to do in the vitamix). Went down well for the men in the house. Will get some fruit to freeze over the weekend for 20 second sorbets and slushees next week. Hoping to do profiteroles and yoghurt on the weekend. Will set in my thermos as I don't have the thermoservers yet. Totally in love!
Olive was the puff easy. That's on my must try list too!
Hear that squealing? That's me taste testing the caramel maple ice cream. Eeeeeeee! All mine! Not sharing :D
Woohoo! Yummy!
I just made pizza dough and brownies... My brownie recipe I converted and my kitchen is clean. No measuring cups is bliss.
....and you thought the thermochef was good :p
Pastry..... From memory (lol) it was!!
Er... no. :p
My ice cream doesn't freeze properly :(. We only have a deep freeze which is in the garage, so that might be it. Or there's something wrong with the recipe or my cooking. Still tastes good though.
