In actual veg news :) We had tempeh burritos again last night. They're quite the springtime staple here!
Snuggly- Glad to hear you survived after consuming the pumpkin :) How do you do tempeh in burritos? We had them last night too, but with beans.. I sometimes do tvp mix but moreso with tacos.
Cherished- What are you eating these days? Thats no good your going insane... :( Hows the herb jungle? Ooooh the zombie chilli plant has sprouted chilli's.... 8 months almost in the making!!!

So hot again here today! After posting yesterday i had to make rice paper rolls for lunch. DP asked if I could give them a break for a while cos he is getting sick of them dammit! :)
Ooh Peach,I love rice paper rolls.I just wish they didn't take so long to prepare.I took some to a naming ceremony on Saturday - carrot, cucumber,capsicum,shi*take mushroom, green bean, vermicelli noodle, Thai Tofu (I think it is soyco brand) and rocket. They were very nice. Actually, the food table at the naming day had a vegan section - a whole half of the table.It was fab! There were lots of vegan cakes. My DD was overwhelmed by the choice, usually there would just be one vegan cake - made by me! Interestingly, there were only 6 vegans in attendance - my family, plus a boyfriend of the host's friend. I thought that was very thoughtful of the host (she is a vego).
I recently made some strawberry muffins for a party that my DD went to. At the end,the mum asked what every one's fave thing had been.One girl said 'the strawberry muffins'.I was pretty chuffed when I heard this as there was a pony at the party! Imagine the vegan muffins being more popular than a pony! (well,to one little girl any way).
I bought a bread maker a couple of months ago and it has been getting a lot of use.I haven't bought any bread at the shop in that time... Cherished,I am going to try your spelt bread recipe soon.
I have been reading about Beverly Lynn Bennett, the Vegan Chef. She has some amazing recipes on her web site veganchef.com I am going to experiment with some of the desserts.....

With your bread maker, do you buy the box of mix to put in it, or make it from scratch? DP bought me one 2 years ago(!) and I havnt used it once :redface: actually we had a garage sale last weekend(so much fun!) and was going to sell it but figured I should at least try it before I sell it, so I got it out of the cupboard and its been sitting on the kitchen bench all week still unused. I put it back away this morning :) I should just suck it up and use it!
AFM nothing exciting as usual but thought Id drop in to say hi :)
Tempeh burrito mix:
Heat up your biggest pan to hotter than the sun, with a little splash of oil
Add 1 diced onion, then 1 tsp ground cumin
Add chopped capsicum, keep stirring
Add tempeh, stir til it starts to brown
Add corn off 1 or 2 cobs
Add a splash of lime juice, some chopped tomatoes and a little bit of vinegar
Season.
We serve it with avocado if we have any and tofutti better than cream cheese. We eat it SO much!
SnugBug YUM and looks so simple, dh makes some kind of pumpkin taco mix too, not sure what he puts in it but I'd say it's go 4 bean bix, corriander, taco seasoning???? lemon and ???? I will ask him anyway :D
Peach herbs are going so well they are taking off in this warm weather! we are going to plant more of the wild rocket because we eat it so much and it grows like crazy :p I'm really eating heaps of salad and basic grains and protein, so rice, my spelt bread and protein like whey powder and tofu, that's about it really, oh lots of fruit too YUMMMMM... so happy this morning I have lost 4.5kg :dance: hahaha to your dh getting sick of the rice paper rolls :rofl: they do sound very yummy... maybe mix up the dipping sauce or filling a bit? And use your bread maker!!! I buy organic spelt flour from the supermarket, if you'd like the recipes again just yell out :)

Went to the beach today with dh and it was just lovely! he even made a fruit salad to eat there YUM
any ideas on what to use tahini for? I bought a jar and can't remember why now ...
You can use it to make yummy home-made hummus or you can put a little on a fresh vegetable salad along with a nice dressing. It is heaps good for you and has a vitamin that is almost exclusively to tahini (sesame seeds). When I put it on my salad, I first put a heaped spoonful of the tahini in a small bowl and add a tiny amount of water, and then mix with a spoon until it is a creamy consistency. It is not as strong this way and has a delicate creaminess to it. Enjoy :D:

Chickpea & tahini cassarole
Ingredients
• 2 (15-22 1/2 ounce) cans chickpeas, drained and rinsed
• 3-4 cups cooked brown rice
• 1 (28 ounce) can diced tomatoes, undrained
• 1 medium white onion, chopped
• 1 teaspoon garlic powder (or equiv. fresh garlic)
• 1 teaspoon dried oregano (or equiv. fresh)
• 1 teaspoon dried basil (or equiv fresh)
• 1-2 teaspoon dried parsley (or equiv. fresh)
• 3 tablespoons tahini
• 3 tablespoons water
• 1 tablespoon toasted sesame seeds (optional)
Directions
1. Preheat oven to 375°F.
2. Mix tahini and water until well mixed (it should get kind of"fluffy"). Set aside.
3. Spray 9x13 pan with olive oil.
4. Dump all ingredients into pan.
5. Add salt and pepper to taste. Mix well.
6. Add tahini mixture, stir until well combined.
7. Bake at 375°F for approximately 40 minutes, until top begins to brown.
8. Sprinkle with sesame seeds, and bake 5 minutes more.
9. Serve hot!

Tahini....
first up, be warned that the jar stuff is not as good as the fresh stuff. I don't know why. Here are some things I use it for:
- stir through soups, makes them really creamy
- use in your hommus
- shake it up with lemon juice and sumac for a tasty salad dressing
- have it over steamed cauliflower (yum!)
- on rice cakes with some kind of chutney
- as a topping on ice cream
- put a little bit through your cake mixes, makes your cake super-rich, especially when used with citrus
...but I've also been known to just lick it straight off the spoon :D It becomes an addiction, especially the fresh stuff.

tahini mixed with honey is delish on sammidges and rice cakes. In Lebanon there is a dessert of tahini and sweet date molasses poured on a plate, half and half - looks great, and mopped up with little yeasted pancake type things called 'ataif. I use it in mtabal ( kind of like baba ganooj, I suppose) with super-smoky roasted eggplant, garlic and lemon, or make taratour sauce and have it with fried cauliflower, caramelised onions, raisins and pine nuts (there goes my cholesterol level thru the roof!). Mix with water, a dash of lemon, soy sauce, sugar and chilli powder for a Korean style sauce which is great on steamed broccoli and fried tempeh chips. There's a japanese dish of steamed spinach with sesame sauce which is pretty much tahini, but they often use black sesame seeds so it kind of looks like wet cement but it's yummy!
To be honest, I never really cook with it, but mainly use it as an ingredient in cold stuff like sauces and salad dressings. But I do have a Greek tahinopita cake recipe that is vegan, must try it out when I get a chance...

We went to alibi room with my sis this morning for the Kombi Driver's breakfast. We ordered a large to share between 3, and were stuffed so full it was a struggle to get the car back up the hill. Yummo yum.
Thanks NaNa that all sounds so yum! dh isnt' 'that' keen on any salad dressing but I'm sure if I made them with your sugestions I could convert him hehhe :p although his fav food is salad (with no dressing) so I might have to start wtih 'dressing on the side' like in a restaurant ;)
hey quick q, what would you serve with the tahini casserole? mash taties? or just bread?
Hi Kaz, I'd just go with salad at this time of the year or maybe some flat bread with some yummy hummus dip to go with it oh and NaNa's beetroot dip :p

Cherished- Good on you with your weight loss! And that is so nice your DH made a salad for the beach, I love the sunny coast the water is so nice up there you lucky thing! As for the rice paper rolls ive made them since my last post I told DP to suck it up and sorry but Im addicted and he will have to suffer the delicious repitition of 3 rice paper rolls a week :) We got a few different sauces including hoy sin(sp?) and kecap manis but I still prefer normal soy. And I still havnt used the bread maker :rolleyes: Oh is there any way you could please re-post your tomato chutny recipie from way back?

AFM- Made a delish stirfry last night with the most amazing plum chilli sauce we got from our local markets. Usual vegies, tossed with hokkian noodles, sesame seeds and more added chilli and voila! Tasted sooo good, next time Ill add cashews and tofu(had none in the pantry) soo yum.
Peach here it is :p gosh it's so yummy and quick to make! I do put in what the recipe says on this one but heap the teaspoons and I add fair bit of coriander in... we love ginger and I added more one time but thought it was way too strong... because it's such a simple chutney the flavours come through nicely in the portions listed.
Tomato Chutney
50 ml cooking oil
6 fresh curry leaves
1 teaspoon cumin seed
½ teaspoon black mustard seeds
4-6 dried chillies
1 large finely sliced onion
1 tablespoon crushed garlic
1 teaspoon crushed ginger
1 teaspoon turmeric
2 cans peeled tomatoes
Salt to taste (1-2 teaspoons)
1 teaspoon garam masala
1 tablespoon raw sugar
½ cup fresh coriander (finely chopped)
METHOD
In a frypan heat the oil then add curry leaves, cumin seed, mustard seed, dried chillies, sliced onion and cook for about 5 minutes. Add garlic, ginger, mix well and cook for a minute then add turmeric powder, stir, then add tomatoes and salt and cook on medium heat for about 10 minutes (stirring occasionally). Add garam masala, sugar, coriander and cook for a couple more minutes.
NB: Tomato Chutney can be kept in fridge for up to 2 weeks and served as an accompaniment or as a relish. Serve hot or cold.

Peach, I am in LOVE with my bread maker. Last night, I made Calzone. The dough was made in the bread maker (only took 50 mins). I did 2 different fillings - tomato paste, crushed garlic, kalamata olives and red capsicum. The other half had tomato paste, crushed garlic, corn kernels and cheezley vegan cream cheese. They were delicious. DH and kids loved them...
I make a loaf of bread every couple of days, sometimes from 'scratch' and sometimes from a pack (Lauke brand) - but always wholemeal. I am going to try bread rolls next.
Cherished, I haven't done the spelt loaf yet. I'll get there eventually.
I will dig out my strawberry muffin recipe, and post it soon.
Hey all. I had a girls night last night, DH is away. I made a vegan lasagne (one of them was absolutely blown away by it - I'm used to that reaction :D) and a caramelised onion tart (caramelised onions and a bit of rosemary on a sheet of puff pastry - nothing spectacular) and greean beans with pine nuts and grape tomatoes.
It was good fun. I am loving green beans at the moment, our supplier has the sweetest most amazing beans. His corn is also incredible. He had an oversupply at the market yesterday so I bought 6 cobs, and on the way home was thinking I probably could have got more. So I'm going to make a pumpkin and sweetcorn risotto, that one's a definite. With the others, probably corn and tempeh burritos. And maybe at some stage a corn chowder or an asian corn and noodle soup with big tofu chunks. I'll keep you posted!

With all the recent talk of rice paper rolls, I made a batch for lunch. Unfortunately, DD doesn't like them. She's not keen on the rice paper.

DH has been in Melbourne this weekend, and has been to Vegie Bar twice! Not fair! He took all the boys (he's down on a bit of a boys weekend - they're playing in a bike polo tournament) there, and apparently they managed to get through an entree, main and dessert because they were so hungry. Now that is a feat!
Hi girls :hello: I'm wondering if you can all share some ideas for my dinner party on Sunday night? I'm happy to have found out today that my dh's work mates wife is also vego :D so they will be happy with whatever we make.... But it's SO HOT here!!! gonna make some salads but am wanting to try something new to go with them, something quick that is cold or even warm would be ok but obviously something that i can prepare earlier if I have to cook it cause honestly I am boiling here and am really wishing we had paid for the central aircon when we built the house :doh:

DH made a tofurkey for thanksgiving. A lot of stuffing around, but it's quite yummy and a bit of a novelty.
What about some rice balls or zucchini fritters?
oh, I am with you on the heat issue. We have had 3 days in a row of 39 deg...
ok, thinking of food that doesn't require the use of an oven....Can only think of rice paper rolls and nori rolls at the moment. I will have a think about it and get back to you....
How about some crepe wraps or flatbread wraps? Call them roulades if you like... Make a batch of plain pancake or crepe mixture (with plain flour, not SR) and add some chopped herbs or pureed roasted red capsicum and cook (or use flatbread or arabic bread). Then spread with tapenade, pesto, or dip/spread of your choice, add some greens, grilled eggplant, grilled capsicum, or whatever, then roll it up and wrap in cling wrap and chuck it in the fridge for a while. Just cut into slices about an inch thick to serve. It's colourful and healthy, and pretty easy especially if you get the fillings from the deli pre-made!! Just a thought... I'll be doing something like that for Christmas (which I want to boycott btw) when I'm sweltering up near Gympie.

SnugBug rice balls is always a winner, might do them too but haven't really made them before, what do you use to stick them together with?
I don't really know how to make rice balls stick together. If you make sticky rice (use short grain brown) and cook it with a bit less water than absolutely necessary, it just seems to sort of work.

Hey, what about falafel? I can always be won over by fresh falafel. Actually, even stale and slighly mouldy falafel has been known to bring a smile to my face.
My dinner tonight is peas and brown rice and spinach with tabasco sauce. DH is out :D

NaNa YUM YUM YUM! What a hit your 'roulades's' were! I bought 2 different kinds of flat breads one was spinach and herb (green) and the other sundried tomato (orange) so they looked good from the start! then on one I added marinated eggplant, feta, rocket and cashew & parmesan pesto spread and to the other I added hommus, sun dried tomatoes, celery leaf, feta and I caramelised some onion for that one too, YUMO so thanks again :D
I also made a little garlic and rosemary spelt loaf which smelt devine cooking and eating, plus we just marinated some tofu and mushrooms in garlic, soy and honey and had it with a rice salad and the leafy green salad that our guests bought over so all in all it was a lovely night.

Was going to suggest feta or cream cheese/tofutti but it slipped my mushy mind... Colourful flavoured flatbreads are a great idea, too. I'd forgotten about them. I used to use them at Soul Foods sometimes for the roulades, when I couldn't be bothered making crepes!
Ooh, I made rice paper rolls the other day too. Someone planted the idea in my head... ;) I think I overdid the Vietnamese mint tho - I love it! And then I went out for Vietnamese lunch with my SIL and had them again, but I'd have to say that mine were better. DS ate all the tofu out of them, so maybe that was it...

I can't imagine who would have planted any ideas of rice paper rolls in your head :rofl: I've got some Vietnamese hot mint in my herb garden and it's great in the asian food.... and rice paper rolls which I am going to make on christmas day, along with more roulades!
