Vegetable Fajita

1 medium onion
3 whole capsicum
1 clove garlic
225 g mushroom
90 ml Olive Oil
2 tsp chilli powder
1 serve corn tortilla


Slice onion. Cut the capsicum in half, deseed and cut into strips. Place in bowl and add garlic. Remove mushroom stalks and slice mushroom cups. Place into bowl. Add oil and chilli powder and mix.

Heat a pan, add vegetables and stir fry for 5-6 minutes. Spoon a little of the filling onto each tortilla and roll up.

Garnishes can include, sour cream, guacamole, salsa, grated cheese.

My partner too is Coeliac.

ALDI supermarkets have frozen dinners (Tikka Masala, Butter Chicken and Rogan Josh) that are Gluten free. I don't eat them but they are good for partner in terms of taking an easy lunch to work.

Another GF winner are MTR ready-to-eat indian meals (there are a couple of other brands too but my memory fails me). They are sold in all indian/pakistani grocers, they are really nice! I eat them all the time. They cost $2 to $3 for a 300g sachet, you just open, heat, add cooked rice and serve. With rice it is a perfect meal size. They are all vegetarian and preservative free as well.

The thing I find most difficult about gluten free diets is that we both work full-time and at times I need quick options or I would spend all week cooking the week's meals, so those ready-made meals are great for that

Also a number of Heinz soups are GF, the ready to serve ones, you just have to check each one.

Most people know about it but in case you don't, the Coeliac Society of Vic publish an inredients guide that I take to the supermarket every time I go. There is a lot out there not labelled as GF but if you know how to check you find some suprises. For exmaple, ALDI sell a gluten free ham, and you get 3 times the amount that Hans sell for about the same price, and Bi-Lo corn flakes are gluten free too.

have just been diagnosed with this lovely coeliac disease.but delighted to find a few of you here and look forward to recipe swapping.havnt been referd to dietician yet so im a little in the dark about what other things to look at on labels besides wheat oats etc.

I have a few...

Lime & Chilli Beef Salad (serves 4)

450gm round steak sliced thinly
cos lettuce
200gm rice vermicelli (or mung bean noodles - virtually allergy free!!)
2 celery sticks sliced thinly or grated
1 carrot grated
100gm bean sprouts
1/4 cup lime juice
4 shallots
1/4 cup sweet chilli sauce or 1 tsp chilli, 1 1/2 tbsp honey, 1 tbsp white wine vinegar

Prepare rice vermicelli or noodles according to packet. Using oil in a fry pan cook the steak. Remove from pan. Using same pan, put the lime juice, shallots and sweet chilli sauce and heat until the shallots are soft. Put aside. Chop lettuce and mix lettuce, noodles, carrots, bean sprouts, celery together. Put steak on top & pour over sauce.

Sounds like a great recipe, Christy! I've been doing something similar 2-3 times a week lately... salad stuff with marinated meat and rice noodles. Great for summer! I tend to throw in cherry tomatoes all the time as Kynan loves them LOL. Adding roughly torn herbs into the salad gives a great flavour too (eg coriander & mint). Last week instead of doing strips of meat I made little meatballs to go in the salad & noodles and that was a big hit. One of the sauces we use a lot is equal amounts of soy & sweet chilli with a little bit of sesame oil & lemon juice. I know soy's not gluten free but tamari could be used as a substitute.

Does anyone know if marshmallows are gluten free? Or if there are certain brands that are?

hmmm will check... my LC told me to have them in coffee instead of rice milk if I don't like rice milk.

Thanks Christy. Have you tried rice milk in your coffee yet? DH tried it in his tea and said it made the tea go really weird, kinda sludgy LOL.

yep... definately yuk on my end. Been having black coffee. I had a look at some pascal's marshmallows at the shops & they had wheat in them :( bummer.

Eww sounds like rice milk doesn't do so well in hot drinks LOL.
That's a shame about the marshmallows. I'll have to check around to see if anyone does gluten free ones. I'm trying to come up with a variety of yummy gluten free things for a chocolatey fondue dessert. Might just have to be lots of fruit!

It's probably a bit late but i have a recipe for gluten free marshmallows...

Marshmallows
4 tbsp gelatine
1 cup warm water
4 cups sugar
2 cups boiling water
1/2 tspn vanilla (optional)
2 tsp citric lemon juice
icing sugar
cornflour (gluten free)

Sprinkle gelatine over warm water and stir to dissolve. Put sugar and boiling water into a large saucepan. Stir in gelatine mixture and boil gently, uncovered, for 20 minutes. Allow to cool until lukewarm. Pour mixture into the large bowl of an electric mixer, add vanilla and citric lemon juice. Beat until very thick and white. Pour mixture into two deep 20cm square wetted cake tins. Refrigerate until set. When cold, cut into squares with a wet knife and toss in a mixture or icing sugar and cornflour.

I've only made these once and they were a little sticky so probably a good idea to leave in the fridge. They will certainly give u a sugar high!!!

Any bread recipes for wheat free bread would really be appreciated!! I have a breadmaker but it just doesn't turn out very nice...

Hi, my daughter (Aaliyah) has just turned 2 and is gluten, diary, soy and egg intolerant (she used to be allergic to these things, but as she's maturing, so is her ability to deal with this stuff). We still feed her a basically coelica diet, with no soy or dairy. It was hard for me to find decent gluten free recipes that weren't desserts!

So, a few tips. The best bread we found was a premix (you can make it by hand, or it's just a suitable in a bread machine if you have one) by Peter Van (do a google search for "Peter Van the Bread Man"). Aali doesn't appear to have any issues with yeast, so I add a bit of that to the premix, but you don't have to. The basic premix recipe on the packet is just add water! Awesome!

Also, we found pasta made of combined rice and corn to be the closest thing to normal pasta - in both taste, consistency and cooking time. Just top with your home made gluten free sauce for infinite variations.

Most of our meals are pretty basic 'cause we like to eat the same to keep Aaliyah involved so she doesnt' feel like she's missing out. She has rice porridge for breakfast, made with only water. She'll have fruit (banana, apple, pear or whatever) for morning tea or lunch, sometimes if she's extra hungry, she'll have a piece of thick PeterVan Gluten Free toast. Afternoon tea is more fruit, or gluten free Fantastic brand rice bikkies with home made gluten free dip (I have a GREAT recipe for beetroot dip among others), and tea is whatever we're having... Baked vegetables (we're mostly vegetarian), pasta, stew/hotpot with rice...

At first, it was REALLY hard to find gluten free/coeliac recipes, but after much trolling, I've got those handy faithfuls that I recycle. Aali's never board, and we're happy to be eating her food too.

Gluten Free chocolate and Pecan Brownies
Preparation Time 30 minutes
Cooking Time 40 minutes
Makes 20 pieces

Ingredients

• 100g pecans, coarsely chopped
• 150g Nuttelex dairy-free margarine
• 150g Lindt Excellence 70 per cent cocoa dark chocolate, coarsely chopped
• 35g (1/3 cup) cocoa powder
• 80ml (1/3 cup) hot water
• 150g good-quality white chocolate, coarsely chopped
• 270g (1 1/3 cups, firmly packed) brown sugar
• 40g (1/3 cup) almond meal
• 60g (1/3 cup) rice flour
• 50g (1/3 cup) gluten-free plain flour
• 4 eggs
• Pure icing sugar, to dust

Method

1. Preheat oven to 180°C. Line the base and sides of a square 23cm (base measurement) cake pan with non-stick baking paper, allowing it to overhang. Spread the pecans over a baking tray and bake in oven for 5 minutes or until toasted. Set aside to cool.
2. Combine margarine, dark chocolate, cocoa and water in a heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir for 8 minutes or until chocolate melts and mixture is smooth. Remove from heat.
3. Add the pecans, white chocolate, sugar, almond meal and combined flours, and stir until well combined.
4. Use an electric beater to beat the eggs in a bowl for 5 minutes or until thick and pale. Use a metal spoon to gently fold half the egg into the chocolate mixture until just combined. Repeat with the remaining egg. Pour the chocolate mixture into the prepared pan and bake in oven for 25 minutes or until a skewer inserted into the centre comes out clean. Set aside to cool. Dust with icing sugar and cut into pieces to serve.

I just found some products from Leda nurtrician that are gluten & dairy free.... google them ;)

Also I make my mexican dinners with corn tortillas now which are gluten free.

Does anyone know where I can get this from? I had a look on the Coeliac Society Vic website but the only thing I could find that was close was a book and you had to be a member to buy it and I cant afford the $75 membership fee.
