    A good rissole recipe?

    I haven't made rissoles for.. god knows how long - a bloody long time anyway.

    Got a bit of mince out for dinner, and it doesn't look like the best type of mince - but I'm sick of doing spag bog all the time.

    Anyone got any fantastic recipes for rissoles?

    ok, you might not have all the ingredients, so might be one for another day??

    they are called Rippa Rissoles

    half cup raw brown rice
    3/4 cup carrots, grated
    3/4 cup zucchini grated
    1 small onion finely diced
    500g very lean beef mince (because all her recipes are low fat cooking)
    1 teaspoon beef stock owder
    2 tablespoons oyster sauce
    1 sachet spring vegetable cup-a-soup
    1 egg white
    pepper to taste

    *Follow cooking instructions on rice packet. Rinse and drain well.
    *Place vegetables in a large mixing bowl, all all remaining ingredients, including cooked rice and combine well.
    Shape into patties (recipe says 12, though I usually make mine smaller and a bit thinner than her photo shows) Also, the mix is a really wet one I find, and the recipe says to refrigerate the rissoles for a few hours if you can, before cooking.
    *Fry in non stick pan coated with cooking spray.

    For a recipe variation, it says you could also use lean chicken mince or lamb or pork. When I make these, I always double the mixture and there is never any leftover.
