Leftover roast beef... hit me with some great ideas
I'm going to a planning meeting tomorrow night (for an afternoon kids' club) and I volunteered to take along some dinner for the crew. I have left over roast beef in the fridge... do you have any fabulous, tasty ideas to give roast beef a bit of polish and turn it into something delectable? (and filling... two of the guys are early twenties fitness buffs and loooovvve their food )
You could cut it into cubes then add a jar of Indian simmer sauce that you like. I do this regularly and it makes a tasty easy meal. It can be done with any kind of left over roast meat. You can add some cubed boiled potatoes to make it go further and serve it with rice (and papadums if you can be bothered cooking them up).
It's dead boring but I love left-over roast beef sanwiches with mustard and rocket (or whatever green leaft stuff is available - watercress, alfalfa sprouts, letuce leaves)
You could slice it thinly, then cut into smaller pieces and reheat in some yummy gravy and serve it on fresh buttered bread rolls *insert homer simpson drool here* OR you could make meat fritters out of it by making a basic pancake batter (with no sugar), dip the meat in and fry till golden <- not sure how manageable that one will be for you though.
Take 125 gm rice vermicelli noodles
Cos lettuce
Capsicum
Grated Carrot
Coriander
eschallots sliced thinly
1/2 cup sweet chilli sauce
2 eschallots sliced thinly
1 clove garlic
1/4 cup lime juice
Pop the vermicelli in hot boiled water for 2-3 minutes or until soft. Rinse the lettuce & tear thinly, slice capsicum thinly. Toss all salad makings in a bowl and mix in the rice vermicelli. In a pan, put the eschallots, lime juice, sweet chilli sauce and garlic and heat for 3-4 minutes until thickened. Taste it and see, sometimes it can be very strong so dilute with some water. Put beef over salad and mix the sauce in and toss it all together.
