Finger food using potato

Hello cooking gurus

I'm going to my sister's 40th on Saturday and BIL has asked if I wouldn't mind bringing a plate of finger food to share.

I have heaps of potatoes at the moment. It's a lunch time thing.

Any suggestions combining finger food and potatoes?

ummm chips or wedges? haha that's all I can come up with that you can use for finger food.

Mini potato rostis or fritter? Grate the potatoes, remove any excess water with a dishcloth and the add seasoning and fry in a small fry pan in something like egg rings?

Ummm what about potato cakes? Potato fritters?
Potato salad on sticks? lol
Ummm chips lol

Potato Billinis w creme fraiche and smoked salmon
Potato Wedges wrapped in Prosciutto
Roast Potato wedges and Hot cheesey dip (or a baked brie)
Potato Focaccia! Make pizza dough, put it in a 20x30 sheet pan coat with olive oil, then top with thin slices of potato, crumbled bacon and fresh rosemary season with sea salt and pepper and bake till golden. There is also some focaccia's e that call for mashed potato in the dough...
