    Homemade Dukkah recipes?

    I'd LOVE to be able to make my own Dukkah - I'm turning into a bit of a snob I think, I wanna serve up Dukkah and fancy schmancy olive oil with turkish bread when we have people over

    I'm busy googling at the moment, but thought I'd ask you all - do you have a recipe?

    I haven't done it yet because of the fact that my food processor sucks bigtime. BUT I know of awesome recipes. Have you ever watched SBS' food Safari, they had a great Dukkah recipe on there, I know that you can pretty much throw anything into the mix, I personally prefer my Dukkah with sesame seeds or nigella seeds but if I'm going to add them I wouldn't grind them with the spices I would add them at the end so they are whole.

    Here is a Egyptian recipe from Food Safari:

    Ingredients
    ¾ cup sesame seeds
    ½ cup pine nuts
    ½ cup coriander seeds
    ½ tsp ground cumin
    ½ tsp salt
    ½ tsp chilli powder
    ½ tsp baharat (white and black pepper, cinnamon, cloves and nutmeg)


    Preparation
    In a large frying pan combine pine nuts and coriander seeds over medium-high heat. When the mix has started to colour, add the sesame seeds and continue to toast until golden brown.

    Pour the mixture into a food processor. Add cumin, baharat mix, chilli powder and salt. Blend together.

    Use as seasoning in cooking or serve as an accompaniment with bread and olive oil.
    Keep in mind you can play with any flavours, and I've even seen some Dukkah with salt in it too if you prefer.

    Do you reckon I could use a mortar and pestle instead of a food processor? Would probably just take longer I'm thinking...

    Here's a recipe I just found, for anyone who wants one...


    Preparation Time
    10 minutes

    Cooking Time
    5 minutes

    Makes
    190g (1 1/2 cups)

    Ingredients (serves 4)
    • 110g (2/3 cup) hazelnuts
    • 80g (1/2 cup) sesame seeds
    • 2 tbs coriander seeds
    • 2 tbs cumin seeds
    • 2 tsp freshly ground black pepper
    • 1 tsp flaked sea salt (like Maldon brand)
    • Extra virgin olive oil, to serve
    • Crusty bread, to serve


    Method

    1. Preheat oven to 180°C.
    2. Spread the hazelnuts over a baking tray and cook in preheated oven for 3-4 minutes or until toasted. Rub the hazelnuts between a clean tea towel to remove as much skin as possible.
    3. Place the toasted hazelnuts in the bowl of a food processor and process until coarsely chopped. Transfer to a large bowl.
    4. Heat a medium frying pan over medium heat. Add the sesame seeds and cook, stirring, for 1-2 minutes or until golden. Add to the bowl with the hazelnuts.
    5. Place coriander seeds and cumin seeds in frying pan over medium heat, and cook, stirring frequently, for 1-2 minutes or until aromatic and seeds begin to pop. Transfer seeds to a mortar and pestle. Pound until finely crushed (alternatively, use a coffee or spice grinder). Add the crushed spices, pepper and salt to the hazelnut mixture and mix well.

    Yep you could most definitely. That sounds YUMMY!
