sorry not very helpful i tend to buy dips!
Sour cream on the bottom.. 2-3 avacadoes mashed next layer then dice tomato, and shallots and sprinnkle over with cheese
now in the sour cream you can either mix it with french onion soup but I think it just ends up tasting like the store bought french onion dip.. Or you can sprinkle it lightly over the very top..
I eat it with sakata bikkies (or similar) and BBQ flavoured. It tastes ok with Jatz as well
I go from scratch, always have, but here's my recent faves:
Beetroot and Macadamia
1 x small can beetroot
1 x good handful toasted macadamias
1/2 block silken tofu (use sour cream if tofu creeps you out)
1 clove garlic
About 10 parsley leaves.
Blitz. Refrigerate up to a week, stir before serving.
For a gorgeous pasta salad, make double quantity, stir through cooked cold pasta, add baby spinach leaves.
White bean dip
1 x can cannellini beans (or use dried cooked)
1 x clove garlic
1 x sprig rosemary
2 tbsp olive oil
Blitz. Serve warm if you want to - yum.
Pea and Rocket pesto
1 x big hand ful rocket
1/2 cup cooked peas, cooled.
1 x clove garlic
1 good handful toasted pine nuts
1 good slug of olive oil
Parmesan (optional. I don't use it anymore)
Makes a great bruschetta topping if you leave it quite chunky, or make it really fine and it's a good dip
Eggplant and Cashew
1 x eggplant
1 x good handful raw cashews.
1 x small chilli
1 x clove garlic
1 tsp ground cumin
1-2 tbsp mayonnaise
1 x handful parsley (or coriander, or even mint)
***** eggplant all over with fork. Roast in oven hotter than the sun. Toast cashews. Blitz everything together.
Lime Pickle Dip
1 tbsp lime pickle (from Indian section of your supermarket)
1 cup sour cream (or Tofutti Better than Cream Cheese to make it dairy free)
Sometimes I add a half block of silken tofu to bulk it out a bit
Sprinkle with chopped coriander.
This one is a little spicy but SO yummy!
Chilli sweet potato
2 x sweet potatoes
Sweet Chilli Sauce
Fresh coriander
Peel and boil sweet potatoes. Mash until smooth. Pour sweet chilli sauce over and sprinkle with coriander.
Avocado, lime and wasabi
1-2 avocadoes (best to get them from Johnno at Broadway Farmers market Woolloongabba)
small dash sesame oil
small slug soy sauce
1-2 tbsp fresh lime juice
wasabi to taste - I have used as much as 4tbsp, as little as 1 tsp.
Kidney bean dip
1 x can kidney beans (or home cooked ones)
1 fresh tomato, finely chopped
1 spring onion
dash of lime juice
ground cumin
olive oil until you get the right consistency
Things to dip with
There's no need to dip flavoured things into homemade dips. The flavour is in the dip! When I see people do this, I judge them. (I take dipping very seriously! lol) Sakata wholegrain rice crackers, VeriDeli Soy and Linseed crackers, Breadsticks, turkish bread, pita crisps, baguette slices, plain corn chips, carrot sticks, celery sticks. If you're buying something to dip into your dips, go for items with the shortest ingredient list. Keep the flavours simple, yeah? (Now I'm just being a masterchef!)

Oh yum! These sound so good! Some of these are definitely on my list of things to try.
I do a cheap-o mexican inspired dip which is always a hit at gatherings.
I just get a tub of sour cream, and mix in a packet of taco seasoning... then I top with diced tomatoes and serve it with corn chips.
My mum gets some sour cream and a cheapo french onion soup mix and mixes it all together. It's like $4 all together and goes great with carrot sticks and continental cucumber sticks and celery. Good luck :)
I have a sweet dip.
I toblerone bar
Cream
biscuit fingers (the italian ones work best)
and/or Strawberries
melt the toblerone and allow to cool (but not completely that it goes hard again). pop in cream and stir until blended. chock must be cooled to stop the cream curdling (sp?)
Serve in a bowl with biscuits and or fruit on the side.

Forgot to add that you can also add a liquor like baileys or frangelico or kalhua to the toblerone dip - just a dash though. it'll take a bit of whipping to get a nice consistancy but it'll be worth it - pure evil mwahahahaha
Also my fav savoury one is simple.
1-2 avodados mashed in with a splotch of sweet chilli sauce and 1-2 garlic cloves crushed hmmm great with carrots, celery and rice crackers ;)
My sister does one with cream cheese and sweet mustard pickles that I love. I also had one that used chicken soup as the flavouring. Very nice. Didn't really grab the recipes for either though. DOH! But they both sound really easy to make. Thats the only ingredients in both.
I fry up some finely chopped semi-dried tomatoes with some finely chopped onion & minced garlic, let cool when the onion is soft and then mix in with thickened sour cream.

I make a tuna dip with:
Low fat sour cream or natural yoghurt, or both
Tuna, drained (can use flavoured tuna, lemon and pepper works nicely)
Grated cheese
Finely chopped celery
Sometimes finely chopped capsicum
Heaps of Lemon/Pepper
I just chuck whatever quantities in...
Two more suggestions for you:
Frozen spinach (thawed and well drained), spring vegetable soup mix, sour cream and chopped water chestnuts. Sounds odd, but is actually delish and the spinach can delude you that it's healthy!
Also love home made hummus - whiz a can of good quality chick peas with mint, lemon juice, blob of yoghurt, a little garlic and finely diced red onion.
Thanks for the instructions for hummus, Ruth! I was just saying yesterday that i'd like my own because it can be expensive to buy and never lasts long!
I have an idea for dippers ladies...
Get a packet of lebanese bread, and cut into large chip size triangles.
Spray with olive oil spray, both sides, and sprinkle with lemon pepper, or salt and pepper, or anything really, maybe rosemary?
Bake in the oven until crispy
They last for days in an airtight container and are much healthier than crisps. Yummy too.
