SOOO many Mangos....any great mango recipes??

We have a HUGE mango tree in our garden and i have about 30 mangos on my kitchen table all about 2 days off being ripe to eat!!! and bout another 50 on the tree which i might try and rescue some of from the bats before they all go!!

BUT....what do i do with them all!?!?!?!? So far i have made mango muffins (some in the freezer) Mango ice pops. We have had mango salsa with prawns and mango pancakes for breakfast, Luckily DD loves them but how many can you really eat!! :)

Im going to make a chutney but i seams you only need on or two for the recipe ive got...any great mango chutney recipes?? or anything else that i can do with them so i dont have to gorge on them all now!

oh wow, that's soooo many! My dh would love to live at your house ATM. I have no idea about mango recipes though, but dh is loving banana & mango smoothies ATM. Maybe give them to neighbours, friends or family?

What about some sort of mango cheesecake? I wonder if you could cut them up and freeze in portions? Maybe they wouldn't defrost so well to eat on their own but you could have them in yoghurt, with icecream and in other recipes?

Like Jas said, I'd cut up the excess and freeze them in smaller portions (even in ice cube trays and then in the zip lock bags once they're frozen). Then you can enjoy them in various ways year-round. Yummy! I love mangos!

yup, i agree, cut them up and freeze them. I buy mango cheeks frozen from our greengrocer.

You could also vitamise them, and freeze them into icypoles. My daughter loves chewing on frozen mango. Can i just add........ i am SO jealous!!!

Yummmmmm!!! My dad pulps them and puts them in little containers in the freezer. Then uses the slushy pulp for mango daiquiris. They are super yum.
We like mango chicken here. It's quite a sweet recipe but we like it. Put some butter, cumin, cinnamon and garlic in a frypan (you can whack in some cardamom too if you like it... I don't much like it, LOL!) Then brown some chicken in there. When it's almost cooked, add some mushed up mango (I use it from the tin but it'd be soooooooo much yummier fresh!) and some cream or light evaporated milk if you're wanting something a little healthier. Serve with rice.

Enjoy those mangoes. We have fleeced a couple from my parents because we're too tight to buy any ourselves, LOL! Too exxy down here :(

Was about to suggest the pulping/freezing for daiquiris too...then you could have endless ****tail material on supply :lol:

........ Had a college friend whom was Indian and she invited me over one day for lunch to try some different Indian dishes and the dessert was yummy but simple to make ... she cubed a Mango and slightly freezed it (not solid frozen) and poured chilled coconut milk or coconut cream all over them in a bowl before serving :D

yumm! I think you need to send some boxes of them down south! Lol.

I would chop them up and freeze them that way you can use them for whatever you want later on. have you asked any of your neighbours/work colleagues/friends etc if they would like some?

I think that the best idea is freezing some to use later. Already made the mango coconut cupcakes but they arnt that great. fine for DD and no sugar, just honey (which is probably why they arnt that great :) )
We had some for christmas and made Daquiries!!! That was a big hit!! but cant just sit around drinking vodka all day....or can i... :)

You can cut and peal them and freeze the cheeks

Hmmm might have to take a trip up to the Sunny Coast and sit around with you drinking vodka all day :dance:

When we lived in Darwin people used to freeze them whole.
