What can I do with Celery???

Hi,

I've just received my groceries (ordered online) and they've doubled up on the celery (and the mushrooms but i can easily use them up- we love mushrooms so i put it in almost everything i make anyway). But not only did they double up on a bunch of celery - i'd only ordered a half bunch and got 2 FULL bunches :o

So i was going to put it in a stir fry tomorrow night and i guess i can use some in a salad 1 night this week (DH is not a big fan of salads though and he's not particularly a fan of celery either, not sure about DS1 as last time he spat it out) and i might have to get the peanut butter out to have it for a snack...but what else can i use it for? Any recipe ideas? How can i make it keep longer? It just seems a waste to end up throwing it away.

I would make a ragu, maybe some soups like minestrone.

I hate celery, but was just looking at the Taste website and if you put in 'celery' a few things come up. There is a chicken and celery casserole & lots of different snacks to use celery with.

I use it in lots of different soups, caseroles ect... it's great in the slow cooker, it cooks it down and you can't really taste it in there.
Waldorf salads use celery don't they?
Oooh thinking I need to buy some celery to have some peanut butter and celery for snacks, lol!

Casseroles, Soup, Stews and Risotto.
The risotto is one of my absolute favourites and so is Stew and Dumlings :D
Chicken soup normally has celery in it I think?

Vegie burgers have celery in it - only two sticks of it though, so it won't take much.. but its something? And they are absolutely delicious.

I use celery in anything I put vegies in. Especially if it's saucy you can't even taste it.
The leaves are very as a water retention prevention tea - but it tastes gross!!
You can even use the leaves if you're keen.

chedder chesse in the middle of a stalk is nice as is peanut butter!!

I have a yummy (and healthy :dance:) Asian dish i use it in, will pop back tomorrow with the recipe, tis at home & im at work!

Every now and then i chop celery up and put it in my pasta sauce, nice small pieces with some onion, small pieces of carrot, garlic, tomatoes, capcisum.

Use it in a tomato sauce for on top of nachos etc.

Okie dokie, here goes...

Ingredients:

2tbs Oyster Sauce
2tbs Dry Sherry
1tbs Light Soy Sauce
1tsp Caster Sugar
1/2tsp Sesame Oil
3tsp Light Olive Oil
600g Chicken Breast, thinly sliced
2 Large Celery Sticks, trimmed, thinly sliced
2 Garlic Cloves
4 Shallots, finly chopped
Pinch of ground white pepper
Steamed rice to serve

1. Combine oyster sauce, sherry, soy sauce, sugar & sesame oil in a small bowl. Heat wok over high heat. Add 1tsp of olive oil and heat until smoking. Add half the chicken. Stir fry for 2 minutes or until golden. Transfer to a plate. Repeat with 1tsp of the remaining olive oil and remaining chicken.

2. Heat remaining olive oil in the wok. Add the celery and garlic. Stir fry for 1 minute or until soft. Add the chicken & sherry mixture. Toss to coat. Stir in half of the shallot. Season with white pepper.

3. Divide rice & stir fry among serving bowls. Top with remaining shallot to serve.

I know a lot of the ingredients people dont normally have lying around but after i made it once i had everything i needed for the sauce so we make it a fair bit now. The recipe has the nutritional info down the bottom too so if you want that let me know ;)

Vegeable cobblers are good, you know the ones with the mixed vegetables and the herb scones baked on top. Very poplular in this house!
Also when dh makes 'dinner' he makes a soup that is full of celery, bacon, corn and noodles. It's not bad!

I love cream of celery soup (really nice in the winter) and because it's all blended up, and has potato that makes it nice and thick, you really don't know it's celery iykwim!

Cream of Celery Soup

Ingredients
1 tablespoon olive oil.
1 medium onion, chopped.
1 bunch celery, chopped.
1 medium celeriac bulb, chopped.
250 grams coliban potatoes, peeled, chopped.
2 cloves garlic, crushed.
1 1/2 litres chicken stock (or veggie stock for vegetarian version)
3/4 cup cream.
1 tablespoon fresh parsley leaves, chopped.

Method
Over medium heat, place a large saucepan and add oil.
Add onion and cook for 2 minutes, stirring constantly.
Once the onion starts to soften, add celery, celeriac, potatoes and garlic.
Cook for 5 minutes until lightly browned.
Increase heat to High and add stock.
Cover and bring to the boil.
Reduce the heat to Low and allow to simmer, covered, for 30 minutes. Celery should be tender.
Remove from heat and set to one side for about 5 minutes to cool slightly.
Using a blender or stab mixer, process soup in batches until smooth.
If you want you can put through a sieve to make sure it's all lump free with no stringy bits.
Return soup to the pan and place over medium heat.
Stir in the cream and season with salt and pepper.
Cook for 5 minutes, stirring, until heated through.
Serve hot, topped with parsley
