Just a totally random question, only cause im eating them right now, but how do they make crumpets, how do they get them so holey and light and fluffy?
Im assuming its not a bread dough, and ive thrown the packet outs so cant read the ingriedients.
has anybody worked in a factory that made them?
can u shed some light on my tastey question??? :p

We visited a commercial bakery in primary school and I remember seeing them made but can't remember how!

It's a thick batter cooked in a ring in a frying pan... When the top is visibly full of bubbles it's flipped briefly. Or is that too simplistic for what you were after?

Strangely enough, on Sunday afternoon I saw the show Sydneysider & they were cooking crumpets on a BBQ in the bush. I can't find a website for them to post the recipe though. They look yum, much thicker than the shop ones, but pretty much the same otherwise.
I plenty of homemade crumpet videos on youtube but I can't find a commercial/factory one :(
I think the batter is much thicker for crumpets.

The batter is like a runny bread mix and it is left to rise for an hour but it is basically made with flour, water, salt, sugar, oil and yeast. Once it has risen, we mix in bi-carb and water mixed together and then it is cooked in butter in a frying pan. I use egg rings to get the shape right.
As it cooks the holes appear on the surface and that's when you know they are done. Since I don't toast mine before eating them I just flip them for a couple of seconds to toast the top, but the idea is that the crumpets cook without being turned.

I always imagined a factory filled with strong, handsome young men, all armed with skewers and delicately poking the holes in the top of my crumpets. Eating them will just never be the same again.
I know the answer to this!!! They are a cross between a pancake batter (ie with baking powder) but they also have yeast in them.
ETA - Just me - I"m *very* impressed!!! Can we have your recipe please, so we can all try it??
