Muffin Recipes - Fave BB Muffin Recipes!
Yesterday I had a ginormous craving for muffins, so I got out the old recipe book and made some peach muffins (modified a blueberry muffin recipe). They were shocking #-o , really hard, not light and fluffy at all.
Does anyone have a really good muffin recipe to ease the craving?? =P~
(note from BellyBelly: sticking thread as it has lots of yummy muffin recipes here!). I have also consolidated all these recipes on the main site in the muffin recipes article.
My Chocolate Muffin Recipe
Mmmm, its easy takes 10 mins to prepare, about 25-30 to cook on 180!!!
2 Cups SR Flour
1/3 cup Cocoa
1/2 cup Castor Sugar
60grm melted butter or Oil
1/2 cup Choc Chips or Melts
1/2 cut Nutella
1 Egg Lightly Beaten
1/2 cup Milk
1/2 cup Sour Cream
Throw in a bowl, mix with wooden spoon. Fill into a tray of 12 muffins and bake. I underbake mine just a tad to get the inside all gooey!!
Cheats white choc chip & raspberry muffins
I bought a pkt mix (I never buy pkts & make all cakes etc from scratch) But at NQR I saw a pkt of Betty Crockers White Choc Chip muffins.
So I grabbed them & on the side it said for a variation add raspberries or blueberries...
So I grabbed a pkt of frozen raspberries (worked out cheaper than the fresh ones)
I added 1.5 cups to the Pkt mix (made as per pkt) & cooked & OMG, these are DELICIOUS!!!!!
I went back & grabbed 2 more pkts & served some up for our dinner party on Saturday night & my BIL (whom is a chef) said they were so delicious & asked for my recipe, so I snuck away & made a hamper for him... I popped a spare box of muffins & the frozen raspberries ina basket for him with a wooden spoon!!! Noone could believe it was a pkt (as I am renowned for me cakes etc)
SO EASY!!!!!
Does anyone have a good savoury muffin recipe for kids?
Hi all, I'm going to have a week of no added colours, flavours or preservatives this week, and see if I can tell the difference with my kids. Today I bought two mini muffin baking trays, and I thought it would be great to make some nice savoury muffins for snacks. Any ideas?
Thanks!
Susannah.
