Hey guys, I have a kilo of mince here and would like to try something different!
Anyone have a meatloaf recipe tried and tested? :D
Here is the one that i make Danni, It has 500g of beef mince and 500g sausage mince, but i sometime just use 1 Kg of beef mince and I prefer it this way.
1Kg mince
1 Cup fresh breadcrumbs
2 onions finely chopped
2 Tablespoons curry powder
Salt & Pepper
1 Tablespoon parsley
1 egg
half cup milk
half cup water
* Combine mince, breadcrumbs, inions, curry powder,salt,pepper, parsley and lightly beaten egg in bowl.
Combine mixture well. Gradually add milk and water, continue mixing until mixture is very smooth.
* Shape mixture into loaf, place in a greased bakign dish. ( I do mine in a loaf pan then tip it into to a bigger roasting tray)
Bake in a moderate oven for 30 minutes.
Remove from oven, pour off surplus fat. Pour sauce over meatloaf and return to oven, bake for a further 45 minutes basting frequently with sauce.
serve hot or cold with vegies or cold with salad. :)
SAUCE:
Half cup water
half cup tomato sauce
Quarter cup worcestershire sauce
quarter cup brown sugar
1 teaspoon instant coffee powder
2 Tablespoons lemon juice (I use the bottle stuff if you dont have fresh lemons)
30g butter
* Combine sauce ingredients in saucepan, bring slowly to boil, reduce heat and simmer for 5 minutes.
I usually make double the sauce as DH loves it so much and we pour it over the vegies as well. My mum use to do the same when she made this for us when we were kids

I thought meatloaf had eggs in the middle, you know hard boiled?
Danni this is a recipe that i use quite often, and it's great for freezing too.
Savoury Beef Roll
500g lean minced beef
1 1/2 cups fresh breadcrumbs
1 onion finely chopped
1/2 cup grated carrot
1/2 green capsicum, finely chopped
1/2 cup finely chopped celery
2 beef stock cubes
1 tblsp worcestershire sauce
3 tablespoons tomato paste
1/2 teaspoon lemon pepper
2 tblsp chopped parsley
2 sheets of puff pastry
beaten egg for glazing
1. combine beef, breadcrumbs, vegetables, beef stock cubes, worcestershire sauce, tomato paste, pepper and parsley. mix well.
2 Spoon half the mixture into the centre of each piece of pastry, forming the mixture into a log shape.
3. Brush edges of pastry lightly with water, fold sides up on top of meat and seal edges. Tuck ends under.
4 place rolls on an oven slide, glaze. Bake in a hot oven 30 - 35 minutes or until golden brown.
To freeze - make rolls up to baking stage, wrap in glad wrap and freeze. Bake from frozen, increasing baking time to 45 - 50 minutes.
Danni, I have a yummy one that I use, I just can't get it to set properly, but it is uummmmm
Creamy Tomato Meatloaf
750g mince
2/3 cup sour cream
50g sachet tomato soup mix
1 onion finely chopped
2 cloves of garlic crushed
3 teaspoons of ground paprika
1 teaspoon chopped red chilli
salt & Pepper
Preheat oven to 180c, line base and sides of loaf tin with paper ( I never do this! lazy!!)
Place mince in a large bowl with all ingrediants and mix until well combined
Press mixture firmly into loaf tin and bake for 1 hour or until well browned and firm in the middle.
Turn out of tin and serve sliced.
hmm forgot to say I cant have dairy!
just uses soy or rice milk.
I have got a non-dairy mock sour cream recipe I can dig up for you, or you might find one online, google etc

All up the meat adds up to just over a kg so I'm sure a kg of beef mince would be fine ;):
Meatloaf 101
4 white bread torn into pieces
1 ¾ pounds ground beef
¾ pound ground pork
1 medium yellow onion peeled and cut into eighths
2 garlic
2 celery cut into 2-inch pieces
2 Teaspoon carrots peeled and cut into 2-inch pieces
½ cup fresh flat-leaf parsley
1 large egg
¾ cups ketchup
4 dry mustard
1 Tablespoon coarse salt
2 Teaspoons freshly ground pepper
2 Tablespoons packed light-brown sugar
Preheat oven to 400 degrees. In the bowl of a food processor, pulse bread until fine crumbs form. Transfer to a medium bowl; add ground beef and ground pork.
Place onion, garlic, celery, carrots, and parsley in food processor; pulse until finely chopped. Add to beef mixture; combine using your hands. Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; combine thoroughly, using your hands. Place in an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan.
In a small bowl, combine the remaining 1/4 cup ketchup and 2 teaspoons dry mustard, and the brown sugar; stir until smooth.
Brush mixture over top of the meatloaf. Place the pan on a baking sheet to catch drippings, and transfer to oven. Bake until a meat thermometer inserted in the center reaches 160 degrees, about 1 1/2 hours. (If the top of the meatloaf gets too dark, cover with foil and continue baking.) Let meatloaf stand 15 minutes before slicing.

my dh makes a mean meatloaf, it is called market place meatloaf. he told me today to google it and print it off for my mum, haven't done it yet but will tonight
ok heres what I made:
1 kg beef mince
1 1/2 cups of breadcrumbs
2 eggs
3/4 cup bbq sauce
1 onion
3 tablespoons butter
minced garlic
parmesan cheese
salt
pepper
parsley
I quickly sauteed the onions in the butter...then added everything together in a big bowl. Made it into a big log...chucked it in a tray and covered in with a tin of tomatoes combined with some brown sugar.
covered the whole lot with foil and cooked on 180degrees for 90 mins.
Dh said it was one of his favourites behind lasagne!! I loved it too :D
Nic and Nessa - That's my recipe too!!! I LOVE it and so does DH, and yes i make a double batch of sauce as well coz it's just so yummy....Mum still has her 'box' full of recipes and one that we use as an accompaniment to the meatloaf is the glazed carrots and onions in the vegetable section....now that is yummo!!!
Ooh Shan, my mum still has the box of recipes too. Will be going to their house on the weekend, so will go searching for the glazed carrots and onion recipe. :)

Glazed Carrots and Onions
Serves 4-6
Ingredients:
500gm carrots - peeled and sliced (rounds or angled - not sticks)
3 small onions - or 1 large - sliced (don't dice them)
salt & pepper
1 tbs brown sugar
2tsp cornflour
3 tbs water
90gm butter
1 1/2 tbs lemon juice
Method:
Cook carrots and onions, salt & pepper in saucepan or microwave and drain.
Whilst they are cooking combine brown sugar, cornflour, water, butter & lemon juice in a small saucepan and stir over low heat until butter melts, mixture boils and thickens.
Pour over carrots & onions and toss lightly to combine...
This is yummy, and i hate eating onion that hasn't been browned first, but this i love...
