help with eggs.....
now i am confused with eggs.
literature says that you must have pasteurised eggs. am i reading correct? and if so, how do i tell? i usually buy organic free range eggs are they ok to use? coz i love to bak and am going crazy having to buy bikkies instead of baking them myself....
thanks

I don't think that eggs can be pasteurised, I think that more so relates to dairy. I think the only rule with eggs is that they are totally cooked.
I use Organic Free Range eggs all the time so I think you should be ok.
Hope I have helped a bit
Spring :)

i used to do menus at the hospital including pregnant women and the only rule about eggs is they MUST be fully cooked eg no sunny side up etc.... i have personally never heard of pastuerised eggs only dairy....

hmm must find the book and reread it. well if they are in omlettes and cakes they would be fully cooked so YAY!!!
so does that mean aswell that if i have to have a mcmuffin inthe morning i can as they cook the egges fully???? and am dying ofr maccas brekky pity its too late in the day ;(

LOL Yep McMuffins are okay... I would get them fresh though, not sitting around. So earlier the better ;)

woohoo macas brekky for me tomorrow!!!!

And the home baked biccies would be fine too as they are all mixed up together and the heat cooks them through and there would be no chance of the egg being left raw.

hmm i seen on a cooking show once on austar and they used a un-pasteurised egg...
it looked like it was off.. but appparantly you can pasteurise an egg...
