Does anyone have a recipe for banana cake?
I've got 3 very ripe bananas and some walnuts, so just need a recipe and also if you know of an icing that would be nice as well. Thanks.

I have several banana cake recipes, but its the one thing I never have any luck with. :(
I will find the best one and post it, if you like.

This one is delicious and not too strongly banana flavoured.
Caramel Banana Cake
2 ripe bananas
125g chopped butter
1 cup firmly packed brown sugar
2 eggs
1 1/2 cups SR flour
1/4 cup milk
Combine all ingredients in a bowl, mix with an electric mixer on low until combined then high until smooth and changed in colour. Place in prepared tin (I use a baba tin) Bake in moderate oven for 40 minutes. Turn onto wire rack to cool.

Now I will have to decide which one to make, thay all sound so yummy, might slowly make my way through them and the boys will love it.

Amanda, Sorry it took me so long to get back to you with the recipe. It has an icing recipe with it also, but doesn't have walnuts in it. If you wanted to have walnuts in it, just roughly chop a handful or two for the cake mixture, and/or sprinkle a chopped handfull over the icing.
This recipe comes from the Body Shop Cookbook, and the reason why it didn't work for me I think was that I had the oven up too high. I am still getting used to cooking in a fan forced, and its a bit difficult. I also put it in one of those ring pans, which was non-stick, but it stuck very fast. The Man didn't seem to mind, he massacred the cake to get it out and happily ate it all up!
Layered Banana Cake with Cream Cheese Frosting
Cake:
250g butter
250g caster sugar
4 egg (beaten)
1 1/4 cups self raising flour
3 ripe bananas, mashed
Frosting:
250g cream cheese
2 lemons (zest)
1 1/2 cups icing sugar
3 sliced bananas
Cream butter and sugar, gradually add eggs and mix well.
Add flour and mashed bananas.
Place in a greased and floured 22cm cake tin and bake for 1 hour at 180 degrees in oven or until cooked.
Cool on wire rack.
Slice cake into two layers, and assemble with cream cheese frosting and sliced bananas in centre, and cream cheese on top (and sprinkle with walnuts if you wish).
Frosting: Mix ingredients (not bananas) in whiz machine until just smooth.
I have another recipe you may like, I have made it a couple of times, with great success, but never with walnuts (I never seem to have them in my cupboard), and never in this fan forced oven. I think I have posted it here once before, but no idea where.
Chewy Ginger Banana Cookies
125g butter, chopped
1 tsp grated lemon rind
1 cup (200g) firmly packed brown sugar
1 egg yolk
1/3 cup mashed over-ripe banana
1/2 cup chopped walnuts
2 cups plain flour
1 tblsp ground ginger
1/2 tsp bicarb soda
Beat butter, rind, sugar, and yolk in small bowl with electric miser until smooth.
Stir in remaining ingredients.
Drop rounded teaspoons of mixture about 5cm apart onto greased oven trays.
Bake in moderate oven (about 220 degrees I think I had) about 12 minutes or until firm.
Cool on wire racks.
