Zucchini bread
So whats your secret? What do you do to make it special?
My recipe is:
3 eggs
1.5 cup self raising flour
1.5 cup wholemeal self raising flour
1 cup vegetable oil
1/2 cup caster sugar
1/2 cup brown sugar
2 tsp vanilla paste (or essence or 2 vanilla beans)
2 tsp cinnamon
1/2 tsp salt
1 tsp sodium biocarbonate
2 medium zucchini's grated (or around 2 cups)
grease 2 bread loaf tins, beat eggs until light & fluffy, mix in oil and sugars. Add vanilla & cinnamon, salt & sodium biocarbonate. Slowly add in flours until all combined.
Bake on a low heat setting or around 180 for around an hour or until cooked through (skewer method)

Yeah just halve it. & it is sweet.

just made this waiting for it to cool if its tastes as good as it looks watch out
also the batter tasted just like carrot cake :lol:
oh and you didn't say when to add the zucchini so I added it before flour hope that was right, also I cooked it in one baking tin, and it only took 40min at 180c :)
