I can recommend Carindale which is a winery on Palmers Lane in Pokolbin. I'm pretty sure they'd be cool with a baby staying - they don't have the facilities for older kids, but I would think a baby would be ok. Nice accommodation, nice people - worth a phone call :)
Manzanilla Lodge. They have self contained cabins, A/C, en-suites, outdoor spa etc and BBQ packs for the evening if you don't want to go out with the feral one ;) (our little person is great through the dat, challenging in the evening) Very child friendly. We stayed there with our 4 month old a few weeks ago and it was lovely. Mid week is cheaper too.
