Traditionally know as Shrove Tuesday, or Mardi Gras (which translates to fat tuesday in french) is the last day before lent, and reason to use the last eggs, milk and sugar. Others call it Pancake Tuesday, whatever you celebrate any excuse to eat Pancakes is good to me!
So whip out those frypans, and don your apron, and share with me your BEST pancake recipe!
I'll be making chicken and mushroom crepe's for dinner, and possibly a regular stack for the kids for dessert.

i just thought a pancake was a pancake... i didnt know you could have chocolate ones!!
Chocolate, Raspberry, Blueberry, Cherry, Ricotta, Ginger (these are great with honeycomb butter) etc etc...
And then you've got savoury like buckwheat, potato, cheese and bacon, or potato cheese and bacon...
We are Pancake aficionados in this house...
My favourite Pancakes are:
Marc's blueberry pancakes with whipped sweet sourcream (tastes like cheesecake)
Ginger Pancakes with honeycomb butter (made from blitzing crunchie and butter and honey) - I sometimes have this with caramelised banana as well...
Chocolate Pancakes with Raspberry butter (I actually have raspberry butter in the freezer YUM)
Regular Buttermilk Pancakes with lashings of maple syrup and streaky bacon
Potato Pancakes with parsley, cheese & bacon...

Cai, pretty please could you share your potato pancake recipe, with the cheese and bacon etc? I would love to make that for dinner tonight!
I must admit I had never heard of this until today when I picked my biggest boy up from his 3rd day at kinda and he announced that they had pancakes today because it's pancake day. lol
We just have a cup of milk, cup of flour, 1 egg and 1/2 cup of sugar. Then lemon and sugar on top :)

Ok this is a recipe I found, that tastes EXACTLY like Pancake Parlour's potato pancake...
Ingredients (serves 1):
Butter Pancake mix (flour, water etc.)
1/2 potato
Cheese
Black Pepper
1. Grate cheese & potato.
2. Drop a little butter in a frypan and put on stove to melt.
3. Make up your pancake mix and pour it out into the warm saucepan.
4. Wait until the bottom of the pancake begins to set.
5. Sprinkle grated potato over the top of the pancake. Push the potato down into the still liquid top of the pancake. Try to cover it all over with pancake mix. Grind a little black pepper over the surface.
6. Once the top of the pancake begins to dry out and the bottom just begins to change color, quickly spread the grated cheese over the top of the pancake so that there is a complete layer of cheese.
7. By the time the bottom of the pancake has browned, the cheese on top should be beginning to melt and stick to the top of the pancake.
8. Flip the pancake as carefully as possible. If the cheese starts to fall off as you turn it, leave the pancake to cook a little more so the cheese can melt into place.
9. Once flipped, simply cook the pancake until the cheese had browned and hardened a little into a crispy light brown crust. It is then ready to serve.
The thing I do to make it more authentic is add some chopped parsley to the pancake batter (and I make sure I don't put sugar in the batter) and you add the bacon to the top of the pancake (already chopped and cooked till crispy) and then top with cheese.
I made DP pancakes for his birthday. Nothing too fancy but he enjoyed them.
I must admit I didn't even know it was pancake day until DP mentioned it when he sat down to eat them. :redface:

Cai, my standard pancake recipe is eggs, sugar (which I would leave out), flour, baking powder, milk etc. Would it work for the potato recipe, or should I find another one?
ETA Actually I think my pancakes might be a little too thin for the potato one, I think I'll have to find another recipe.

That recipe should be fine, just make sure you have good SR or even add 1/4 tsp baking powder to help rise.
Yeah, I use flour and BP, but it's a very liquid recipe, and as such the pancakes are quite thin, even almost like crepes. I'm thinking the potato won't have enough time to soften?
Ahhh in that case you want a thicker batter definitely, but you can play with the flour ratio as that would help out too. And you can also grate the potato and nuke it for a few minutes (a few drops of water cover in glad wrap and poke with holes).
