Join me in a Bake and Share Day 3/3/11

OK, so I was thinking that next Thursday, lots of us BB members could bake a chocolate cake! :D It would be cool to think that people everywhere are baking the same thing at the same time!

But then I thought, to make it even better, a condition of baking is that you share it with someone outside your household - a neighbour, friend you might not have seen in a while, relative, work colleagues, your kids soccer coach etc. It would be a great way to connect with others and show you care. It can be a simple chocolate cake, packet cake, choc chip, carob, white chocolate mud cake, or chocolate fudge cake with chocolate ganache if you are so inclined, anything will do! But, it does have to be home-baked so no going to Woolies and buying one!

What do you think? Who's with me for next Thursday?

I would love to but I'm already doing enough baking on Tuesday for my DD's B'day! Maybe next time if you do it again.

I will already be baking my dd first birthday cake ;)

id love to be in on the baking, but only sharing would be with the kids as we dont go anywere or see anyone, unless i could count the outside dog?!

JLeigh; Sorry, I forgot to post back! Here is the rv recipe I use. It is truly delish. Everyone that I have shared rv cupcakes with are intrigued when they first see these gorgeous little red creations, topped with a white creamy icing (French Cream Icing), then come back for seconds. And thirds. And you get the idea... A layered cake covered in the white icing makes quite a statement when you take out that first slice....

Ruby Red Velvet Cake

2 1/4 cups plain flour
1 tsp salt
2 tblsp cocoa powder
4 tblsp (or 60mLs) red food colour
115g butter, soft
1 1/2 cups castor sugar
2 eggs
1 cup buttermilk
1 tsp vanilla extract
1 tsp white vinegar
1 tsp baking soda

Preheat over to 175c (or 155 fan forced). Grease and flour two 9inch cake tins.
Sift together flour and salt. Set aside.
Carefully combine cocoa and food colour together in a small bowl, until smooth. Set aside.
Cream butter and sugar together in a large bowl. Beat for at least four or five minutes until fluffy.
Add eggs, one at a time, beating for about 30 seconds after each.
At low mixer speed, add the flour mixture alternately with the buttermilk and vanilla. Scrape down bowl sides as necessary.
Add cocoa mixture, continue mixing until batter is uniform colour. Do not overbeat.
In small bowl/glass, mix vinegar and baking soda (it will foam!). Stir briefly to mix, then fold into cake mix (do not beat).
Pour equally between prepared pans, bake 25-30 mins or until baked when tested. Allow to cool in tins for 10 minutes before turning out to cool completely. Fill and ice when cool.

Or, makes 24 cupcakes; bake 15-20mins,
bundt pan (you know, the fluted ring pan); 55-60 mins,
9x13inch pan; 45-55mins.

Use a glass bowl to combine the cocoa and food colour in, and be aware it will stain almost everything! I use Queen brand "pillar box red" food colour.
I used baking powder as I didn't have baking soda (:redface:). It works, not sure if the cake is a bit more dense than it should be, but it works for me.


French Cream Icing

5 tblsp plain flour
1 cup milk (not sure if you can use skim milk?)
225g butter, soft
1 cup castor sugar
1 tsp vanilla essence

Whisk flour and milk together in small non-stick saucepan over low heat. Stir with whisk continually until thick and starting to boil. (mine never boil, they just seemed too thick, but I do cook them for a few minutes). Remove from heat, spread over a cold dinner plate to cool faster, stirring and turning over with a rubber spatula to speed things up a bit. Give the odd stir and turn while whipping the butter. It must be completely cool before adding to the rest of the ingredients.
Whip butter until fluffy.
Add sugar and vanilla, beat until mixture is smooth and sugar is dissolved.
Add the cooled flour mixture to the butter mixture, beat until smooth and stands in peaks.
Spread over cupcakes (makes more than enough for 24 cupcakes, maybe even 36), or use to fill and spread over the two round cakes.

Delicious! Don't be put off by the 'cooked' aspect of this icing. I think this is MUCH better than cream cheese icing. One of our friends said it tasted like ice cream, and seemed to be wondering how this ice cream icing wasn't melting at room temperature.

Both recipes found on the internet, but can't remember where!

I think it sounds like a great idea so I'm in (to bake my own chocolate cake, not come and eat yours) ;) and I know just who I will share it with, my old work place... I'll drop it in as a bit of a thank you, I know I used to love it when clients would bring in morning or afternoon tea!

i am going to attempt the red velvet cake, just because i can and am dying to know WHAT it tastes like!!! and FIL has requested a vanilla slice, so ill do the RV for me, and the VS to share... would that be alright? cos if it is, then count me in!

Sarah, sounds fine to me. After all, "I" share with "myself". And if you're pg or bf, then technically you're sharing too (AND get to have TWO pieces). ;)

I haven't got time to make a cake after work tomorrow, so tonight i made some chocolate peppermint bark (yay for finally getting rid of the last of the candy canes!) cos a friend said he wanted some - so i'm taking that to work tomorrow - does that count?

peppermint bark - there are heaps of recipes, have tried a few - the most successful is just white chocolate melted and spread reasonably thin, crushed candy canes, topped with milk or dark choc that has been flavoured (lightly) with peppermint essence. then you break it in random pieces. nom nom nom. tonight i swirled a bit of the white choc through the dark choc topping just to make it purddy seeing the guy at work doesn't think i'll show up with any lol

Thought I'd post a simple chocolate cake recipe. I've never tried it, but it looks so easy I thought it was worth a go!

So Simple Chocolate Cake
3 cups flour
2 cups sugar
5/8 cup cocoa powder
2 tsp baking soda
1 tsp vanilla
2 cups cold water
2 tsp white vinegar
2/3 cup vege oil

Preheat oven to 180 degrees. Mix all ingredients until well blended. Bake in a 23cm x 30cm baking dish for 35 mins. Cool completely before turning out. Ice if desired.


* I plan on halving the sugar, using 1/2 wholemeal and 1/2 plain flour and a round pan.


Just made my cakes! I halved the recipe and still had enough for 12 patty cakes and 5 muffin-sized cakes (ran out of patty cases!) so unless you want to feed your entire street, go for a half-batch - they don't do things by halves in American recipes. :o They cooked in 13 mins. I used 1/3 cup sugar, 2tsp baking powder (instead of baking soda - what's that?) and 1/4 cup cocoa powder. HTH

I didn't have enough cocoa! So I made oat cookies, now DS2 is sick so I'm not going to work anyway. I might buy cocoa & take brownies next week.

Snowy Love - oh no, poor DS. The oat cookies sound great though.

DH went off to work with a batch of patty cakes and MIL and I will share some today. The whipped butter icing is amazing! :D Mission accomplished!
