    All-in-one brekkie

    All-in-one brekkie

    Preparation Time 10 minutes
    Cooking Time 25 minutes

    Ingredients (serves 6)
    6 lamb, rosemary & garlic sausages
    6 large portobello mushrooms, ends trimmed
    2 tbs extra virgin olive oil
    6 bacon rashers
    6 ripe egg tomatoes, halved lengthways
    6 eggs
    Toast, buttered, to serve
    Method
    Preheat oven to 200°C. Arrange the sausages and mushrooms in a large roasting pan. Drizzle over oil and season with salt and pepper.
    Bake in oven, turning once, for 10 minutes. Add the bacon and tomato and bake for a further 10 minutes or until mushrooms and tomato
    are soft.
    Arrange the mixture in the pan to create 6 spaces. Crack 1 egg into each space. Bake for 4-5 minutes or until the eggs are cooked to
    your liking. Serve immediately with buttered toast, if desired.

    Now what we've done from time to time is instead of cracking the eggs at the end we'll scramble them as we normally would. Also depending on your oven you may need to vary cooking times...

    Yum, we've done this before after seeing something very similar on one of Jamie Oliver's shows. So yummy, and easy.

    Cailin, how much time to you spend in the kitchen? I love all your recipes but I doubt I would have time to do half of them. Maybe it's because I work part time?

    ATM I feel I don't cook enough! I need more inspiration....!!!!

    But you're right if I worked I probably wouldn't have the time, except for weekends then I'd cook up a storm. But I do love to cook And most of what I do is pretty easy! And I have a 2 great kitchen hands...
