Does anyone know how to preserve pasta sauce in a jar?? DH and i were speaking about this tonight, there is absolutely no good jarred pasta sauce in the supermarket (in our opinion) and we were wondering if we made up a big pot of pasta sauce (dh makes the best pasta sauce) can we put it in jars somehow to make it last?? We dont have room in our freezer so puting it in jars would be better for us. Has anyone done this or knows how to do this? How long would it last?
- Hunt down grandma's Fowler's Vacola jars and use those. BEST way to do it. Wash out jars, check rubber seals, bung pasta sauce in, seal, clip lid on and boil in a water bath 20-ish minutes. Will keep until the seals die (over 12 months).
Failing that, you can reuse jam jars if you wash them and lids, sterilise (Milton's sterilising liquid from supermarkets is quick and easy) and dry/heat them in the oven (around 80-100 degrees until dry, just watch out if the lids have plastic linings . . . ) and then put the HOT pasta sauce in the HOT jars, put lids on and leave until the little popper thing goes down. Won't keep as long as Fowler's jars but should still keep 3-4 months, maybe longer. Certainly longer if you buy new lids for old jars. There's a good shop in SA called "Bake and Brew" who do mail order if you want to Google them. Also stock FV jars, seals, lids and clips, but they're EXPENSIVE new. Try checking the local (especially country if you can get to them) op shops for the jars, lids and clips.
