    Question What do you put on/in your enchiladas?

    I make enchiladas with the packet thing, it says mushroom and onion inside the enchilada, and tomato and cheese on top. Well Shel is allergic to mushroom, and I hate tomoatos (but love the sauce lol), so its usually only onion, which tastes ok, but I'm sure it could be much more interesting. Anyway, I've been trying to work out what to put in it but keep drawing blanks! How do you make enchiladas?

    We have had some with chicken and kidney beans, along with a tomatoey sauce inside it...cant remember what else was in it.

    red kidney beans - and we often mix the mince, half beef and half kangaroo

    cheaper, good for you, and quite yummy!

    (not while preg though!)

    Mmmmmmmmmm kidney beans didn't even think of that, capsicum and zucchini sounds good too, and coriander

    (not a fan of the kangaroo though, thanks anyway kitt3n )

    Stingy pork, shredded lettuce, sour cream, scrambled egg...all or some!
    I've been eating them since I was a kid cos of my background Red kidney beans cooked as refried beans are the way to go - you'd find a recipe online for that - heaps of energy in refried beans and you can dispense with the meat if you use the beans.
    You could fry up Haloumi cheese in thin slices and put that in, too.
