Talking healthy snacks that i can cook in bulk and freeze

I posted this on my face book status, and got heaps of great ideas, so thought id ask here as well.
So i am in need of healthy snacks that i can cook in bulk and freeze and that dont cost a fortune.

My son cant have additives or preservatives and i have been a bit slack latley and just buying pre packaged food, so im feling a tad gulity that i have neglected his dietary needs. The kids have been having home baked mini muffins for a while now and they are getting a tad board with it all, and need a change.

I also cant have any nut based products as the school has a no nut policy.

So please share ur great snack ideas..

    Scones?

    Pikelets?
(freeze with freezer wrap between each pikelet, and then spread with butter/jam before school)

Maybe go look at a site like bento lunches? They have heaps of great ideas!

I just read somewhere of a mum who does roasted chick peas... so they go crunchy. I don't know how they would freeze though.

I used to freeze my muffins (oh that sounds hilarious!!!!) and pop them in the fridge the night before they went in the lunchbox.

My DD's favourite thing that I freeze is steamed carrot, broccoli and cauliflower in little zip lock bags. I also freeze some cheese sauce in ice cube trays and add one to the vegies after they have been in the microwave.
Other things that I freeze and take out with us are mini baked ricotta with vegies in them, both savoury and fruit muffins, home made chicken nuggets, corn and zucchini fritters, rissoles and home made crumpets.
