I make cauliflower and cheese soup...YUM! I love it, but I love most soup!
Anyway I:
Chop an onion fry it off in some butter in your pot.
Chop up the cauli, chuck the cauli in too and stir it around for a bit.
Then I add some stock (chicken or veg usually - Whatever I have in the pantry!) but don't completely cover the cauli, maybe 3/4 cover it.
Let it boil away till it gets soft.
In the meantime, make a cheese sauce (or if you are feeling a bit lazy prepare some packets of cheese sauce!)
Drain some of the stock from the cauli but keep it in case you want to make it runnier.
Blend
Add cheese sauce, add some more stock if you want it runnier
and 'wolla' yumyumyum!!!
Don't know how well it freezes...I always eat all of it lol!!
