I've never been a fan of coleslaw but that might just be because I've never had a good one, mostly just the crappy pre-made ones that make me want to gag just at the smell.
Cabbage - green and red (purple), finely shredded
Red onion - finely shredded
Red capsicum - finely shredded...lol sensing a theme here?
Snow peas sprouts (dont need to shred those! hehehe)
Pineapple (tinned)
Carrot - finely shredded (or grated)
I know of people adding walnuts too. (but I hate nuts)
Dressing is usually mixture of yoghurt and mayonnaise - take the time to make your own, or use WHOLE EGG mayo - none of that tangy praise rubbish, you need body and real flavour. A little lemon juice, also, you can add some shredded (surprise surprise) mint or corriander to it for something different.
Make sure everything is really fresh so you get the crunch, and the BIGGEST secret to great Coleslaw is not to use too much dressing!! It should only just be coated, not swimming in it

I have never made my own but nothing could bet my mum's....its like Limslice's but without the pineapple and with fried bacon bits. Might give Limeslice's ago this weekend with the pineapple....sounds yummmmmy!!!
