    What's your favourite easy meal to impress?

    I've got a group of girlfriends coming over tomorrow night. What is your favourite easy recipe that impresses? I've got DD and she's been a handful the last few days so trying to come up with something that isn't going to take me hours upon hours to prepare

    Rack of Lamb with Pesto Mash is my quick and easy yummo meal.

    All it is is a rack of lamb (obviously) which i stick some garlic into and roast.

    Then I make mashed potato and add a couple of tablespoons of sundried tomato pesto and serve the lamb on top of that with some fresh beans and carrots (or whatever I've got in the fridge) on the side.

    It's delish and quick to make!

    If it's a girly night I like to make a warm chicken salad. It can either be in a big bowl for everyone to help themselves or individual bowls looks great too. you can prepare the salad earlier & then I just marnate the chicken, cook when ready & add to the salad. Easy, yummy & great when it's warmer.

    Lamb with Orange Cous Cous looks fantastic & tastes delicious...

    Lamb with Orange Cous Cous

    8 Lamb Cutlets or Chops
    ½ cup orange juice
    ¼ cup redcurrant jelly (I've never been able to find it so I just use jam, usually a combo one with cranberries)
    ¼ dry white wine
    2 tbs chives

    1 1/3 cup orange juice
    2 cloves
    ½ tsp cinnamon
    1 bay leaf
    1 1/2 cups cous cous
    30gm butter

    • Place lamb on wire rack in baking dish, bake uncovered in moderate oven for 35mins.
    • Combine juice, jelly, wine & chives in small pan, simmer uncovered until thickened slightly.

    Cous Cous
    • Combine juice, cloves, bay leaf & cinnamon in medium pan, bring to boil & remove from heat.
    • Stir in cous cous & stand for 3 minutes until absorbed.
    • Stir in chopped butter & discard cloves & bay leaf.
    • Serve lamb with sauce, cous cous & peas.
