My mum has DS 2 days a week, and I am looking for some recipes so I can make his in advance, and mum can just heat/slice/etc and serve.
DS wont eat eggs if he can taste them (but as an ingredient its fine), and he gets constipated really easily so I tend to steer away from bread/pasta/rice.
Making it tough I know, but any suggestions would be welcomed!

What about things like mashed avocado with cottage cheese and chopped lettuce, plain old steamed veg with a bit of rice cereal to give it some "taste" (LOL!), or egg mixed with apple (wierd I know but it helped Flynn get over his egg fixation!)
I tend to make up little cup-size serves of casserole and freeze them for lunches/dinners, and I know rice is out but risotto freezes really well. My mum can't tolerate rice much ATM (just had lap-band surgery) but the slipperyness of risotto seems to make it ok.
have you tried gluten free bread, as that might help with constipation?
In which case riosotto is perfect - you can do it in the oven - basic quantities are 2 cups of arborio rice to 5 cups of liquid baked in a covered pot at 200 degrees for 40 minutes. You can add vegies at any stage, use water, stock or wine as a liquid, and I sometimes make a basic batch and add vegies/chicken at the end for a bit of variety. Adding cream and parmesan at the end once its all cooked makes it nice and creamy
