DH has been hassling me for fettucine carbonara for the last couple of weeks - used to have access to a recipe that was really simple, but due to a break down in his family, we can't get to it anymore. so, i need to ask for a really simple recipe for a carbonara sauce that doesn't have any mushies! can anyone help me?

Donna Hay's Baked Carbonara:
Cook 400g ziti or fettucine (we often use spaghetti and have even done penne) until al dente, then drain. Cook 4 chopped rashers of bacon till crisp (I often do 1 onion and some garlic as well). Whisk together 4 eggs, 2 cups cream, 1 1/2 cups milk and 1/2 cup grated parmesan cheese. Place pasta into an 8 cup cupacity ovenproof dish (I do a big flat lasagna dish, I did do it in a oval pyrex but found it was too deep and needed to cook in a shallow dish) and top with bacon and egg mixture. Bake in preheated oven for 30 minutes or until set. (You may find its a little runny to start with but once you mix it around it thickens and is divine. Its the cheats way I reckon and very easy for straight after work - or a busy day, as once its in the oven you've got some relax time!)

I have a quick and easy one, while the pasta is boiling cut up two rashers of bacon and a medium onion, brown in a pan with one galric clove and a pinch of chilli. Let them brown until you only have a few minutes left, add 300 mls of cream and a teapsonn of seed mustard. Turn off the heat. Drain and add the pasta to your pan, mix through an egg yolk and serve.
