    Filo Parcels

    Good Day Ladies,

    I know I post alot in here but I love my cooking!! Lol.....

    We were doing the grocery shopping yesterday and DH wanted to get some chicken filo parcels and I said 'NO' and that I can make them cheaper then that!! Lol....Now he wants them for dinner tonight.

    So I want to know if you ladies have any good recipes for them!! I am doing chicken ones and have a full pantry of all sorts or goodies!!

    Cailin - I know you have a good one.....You have a good recipe for everything...So hand it over.... !!

    I have not got mums recipie but hers are to die for!!

    Filo's sound nice tho hmmmm

    Well I have made them just by what I think would be nice.

    4 Thigh Fillet, chopped into bite size peices
    1 Onion, sliced thinly
    8 Mushrooms, sliced thinly (I used cup mushrooms)
    3 cloves Garlic
    3 tbsp Flour
    1 1/2 cups of Chicken Stock
    4 tbsp Milk
    2 tbsp Mustard Powder

    Saute Chicken, Onion, Garlic. Add mushrooms. Sprinkle flour over mixture and cook for a couple of minutes. Add Stock, Milk and Mustard Powder. Let simmer till thick. Let cool and make the filos.

    MANGO, MACADAMIA AND CHICKEN FILO’S
    Light thickened cream
    Chicken breast or thigh
    1/2 -1 small onion - finely diced
    1 clove garlic - crushed
    Tinned mango (i just keep adding diced pieces as i go til it looks like enough)
    Finely chopped macadamias (or other nuts eg pistachios, walnuts, almonds..)
    Cracked pepper and sea salt to taste
    Filo pastry - light

    Fry up onion, garlic, chicken..til browned. Slowly add cream (prob half a cup or so - depending on quantity - pretty much just til ingreds are covered and creamy). Add mango, nuts, salt & pepper. Add more cream if necessary - and a splash of white wine never goes astray either! Don't let it get too runny though. can add some breadcrumbs to thicken. Allow to cool in pan to thicken.

    Use about 6 layers of filo pastry and cut into rectangles. Spoon cooled ingreds onto one end of pastry and roll up. Fold up ends.

    Bake in mod oven until golden.

    Totally delish - I think it was from a wonderful lady on BB actually.
