    Recipes to be refrigerated and reheated? Help!

    My DS is in Grade 1 at school. The father of one of his little classmates has cancer and is dying. My friend, mother of DS's classmate, is struggling to cope with caring for her DH and two young children. The physical and emotional burden must be so massive. My friend has accepted an offer of pre prepared meals which she or her MIL will collect from the fridge at the end of the school day and take home to reheat. I expect that the parents of the class will rally around the family and we will prepare meals on a roster. So, give me your re-heatable recipes... stuff that tastes good and doesn't go soggy or dry when it's warmed up. They must be lactose free (or able to be substituted with a lactose free product) as dad is lactose intolerant. The kids are 6 and 4 and not terribly adventurous eaters...

    Any other ideas of things I could do to help would also be appreciated. We (parents of children in her DS's class) have offered assistance with the kids and help driving to medical appointments. Late last year I made a photo album of the family from photos taken at a surprise birthday lunch for mum (organised at her DH's suggestion). Any other ideas?

    20g ghee
    med onion chopped
    1.5 tbs lemon grass, finely sliced
    small red chilli, finely chopped
    4 crushed garlic cloves
    3 tsp grated ginger
    1.5 tsp ground tumeric
    .25 tsp ground cardamon
    .5 tsp ground cinammon
    .25 tsp ground ground cumin
    .25 tsp ground ground coriander seeds
    .25 tsp ground ginger
    .5 tsp salt
    .5 tsp cracked black pepper
    1.5kg chicken breasts halved (but next time I might use thighs or chicken pieces)
    1 cup chicken stock
    chopped fresh coriander to serve.

    Melt ghee in a non stick pan and cook onion over med heat until just soft. Stir in everything else but the chicken, stock and fresh coriander. Cook 1 minute or until fragrant.

    Add the chicken to the pan and coat in the onion mixture and then pour it all into the slow cooker.

    Add the stock. Cover and cook on high 1.5 hours then low 3 hours or alternatively on Auto for 5-6 hours. I thickened the sauce a bit with cornflour paste and served it with rice and sprinkled over the coriander. Yummy and it has a bit of a kick to it so I topped with a dollop of sour cream to calm things down a bit.
