This may be a silly question - but I am paronoid about food poisoning - can you freezing something, defrost it, cook it and freeze again, then defrost and eat?

I defrosted a chicken breast for DS's dinner and it was bigger than I expected, so was thinking I would crumb it and make it into some crumbed fingers,cook and freeze and use at another time..
