I was vegetarian for 11 years. only started eating meat 2 months ago because was having trouble cooking all the balanced meals I used to eat because bubs is very active and clingy around dinner time. I still make about 3 or 4 full veg meals a week. Stirfry, veg bolognese and spinach and ricotta canneloni (if baby lets me).

We eat about 3 vegie meals a week....usually stirfries, pastas and sometimes vege curry or soups.

It can be a challnge though, both DH and I are a fans of a god roast or steak! lol

I should probably eat more vege meals a week, but I'd probably cook one a fortnight and that's usually a risotto - either mushroom and parmesan or roasted pumpkin and spinach.

Thanks for posting that link Leash - it has given me some more ideas.

we aim for 2...sometimes we have more, sometimes less.
Though we eat fish at least once for dinner and once for lunch and we have chicken/turkey/pork 2-3 nights as well.
DH rarely complains even though I know he's an enormous red meat fan.

The only regular vegetarian/no meat meal I make is microwave nachos (Corn chips, 4 bean mix (tin), salsa and cheese in the microwave till cheese melts n add sour cream) I make it cos i'm lazy tho - not cos its meat free
