    I need your best potato salad recipes please

    my mum is turning 50 soon and I am throwing her a birthday party we are having a BBQ with salads baked potatoes and desserts.
    I am making a pasta salad, coleslaw, tossed salad and potato salad. I usually just boil my potatoes in cubes until cooked but not soft when they cool I add some mayo and fresh mint and I am happy with that and could eat bowls and bowls of it but I thought I might see what others do and give them a trial go and see if I like them better.
    I particulary like ones with egg in it but any will do.

    If you have any other salad ideas I am happy to hear them too.

    I make mine pretty much the same way as you but I usually chop some hard boiled eggs up and stir them in and also chives and dill.
    I put some seedy mustard in when I made my mayo last week for extra yumminess.
    I like to chop some smoked salmon really finely and put it on the top of the salad - it makes it look nice as well as adding yumminess.
    I usually keep a bit of chives and dill back for garnish

    I'm no foodie and I'm sure other will be in here with potentially better (and more precise) recipies, but I think I make a pretty good potato salad.

    Boil cubed potatoes 'till almost soft
    Toast pine-nuts on a fry pan - sometimes I also toast garlic cloves and crush them in too
    Hard boil some eggs, peel and cut in quarters
    Mix in with chopped parsley, a can of sweet corn, salt and pepper and plenty of good quality mayo (I LOVE the one made with free-range eggs you can get from Safeway - can't remember what it's called but it's got a bit of mustard through it and it's great)

    My mum's mustard potato salad:
    Cubed potatoes
    Peas
    Corn kernals
    Boiled eggs sliced
    Raw onion diced
    Masterfoods Australian mustard
    Mayo
    1 teaspoon sugar (to cut tartness)

    Boil potatoes till just soft then mix everything together, yum!

    Sliced Red onion


    Another pasta salad
    Fresh tortellini - cooked.drained add
    sliced cabana
    sundried tomatoes
    thinly sliced celery

    What about a rataouille (sp) one? Cook grilled capsicum, baked eggplant ad zucchini in a tomato passata sauce and add boiled baby potatoes, lots of olive oil and seasoning. Yum!

    Apart from the diced boiled potatoes I put chopped boiled eggs, bacon, shallots, mayo and whole grain mustard. It's super yummy

    i do..

    boiled cubed potatos
    boiled egg sliced
    shallots thinly sliced
    some diced ham
    then just mix it all together with the potato salad mix you get in the mayo section (forget what its called sorry) then put it in the fridge til its cold

    mmm so yummy! Big hit at work lunches & at home

    Potatoes
    Parmesan Cheese
    Spring Onions
    Egg

    Dressing:
    Whole Egg Mayo
    American Mustard
    White Wine Vinegar
    Sugar 1/2 tsp
    Salt & Pepper

    Microwave cleaned potato's in thier jackets till cooked then cool slice across potato in thin slices not going all the way through. Cook of some chopped bacon and a little onion and cool. Chop up some boiled eggs and add to Hienz egg mayonnaise and add cooked bacon and onion and pour over your potato's that are cooked in there jackets YUMMO!!!!

    if feeling slack cubed cooled patato's with egg mayonnaise and mint sauce but this recipe does not compair to the first oen

    cut and roast potatoes
    sliced bacon
    spring onions
    fresh chopped parsley and chives
    sliced red onion
    warm boiled eggs - you want the yolk cooked but only just


    Dressing:
    1 part sour cream: 2 parts mayo (whole egg or homemade works best)
    squirt of lemon juice
    seeded mustard
    salt pepper
