Just wondering does anyone have any Christmas pudding receipes that can be made at the last minute. One of my tasks for our Christmas Day dinner is the Christmas pud and I was only told last week. I know I could go and buy a gourmet one from somewhere - but thought it might be nice to try and make one (or probably individual ones for each person). Does anyone have a kinda cheaters receipe given I can't steep the fruit now for any long period of time?
I'm cheating this year and only soaking my fruit for about three days.
A couple of years ago I made small puddings that had chocolate in them, no fruit soaking necessary. Maybe google " individual chocolate Christmas puddings".
Not traditional but people lived them, especially after a big meal.
Thanks ladies have done some searching and found nice receipe. Last question hopefully if I can't find individual moulds the right size I should be able to use jumbo muffin tins instead? And potentially adjust cooking time if capacity is slightly smaller? Am intending to steam in water bath in oven.
Thanks - managed to get some individuals moulds and cheekily asked if she would give me a discount for purchasing 10 and she did! And even better they are the right side for the receipe. Happy days - now to get the fruit to soak!

Individual puds turned out great - even if I do say so myself Found great receipe on line - soaked fruit for 5 days and made them on the Friday night so i had time to purchase shop bought one if disaster. Steaming them in the oven worked a treat as well so were rich but no too heavy at the same time. Even the non pudding eaters rated them. Think the receipe will be a keeper!

Of course - sorry should have thought of that before -
225g brown sugar
225g unsalted butter
Grated rind one orange
4 eggs beaten
225 raisons (chopped)
50g mixed peel
225g sultanas
100g currents
50g glace apriocots or pineapple (chopped) I just used glace cherries here
150g plain flour
1/2 tsp ground giner
1 tsp mixed spice
1/2 tsp cinnamon
50g almonds (chopped)
50g grated carrot - must say this one surprised me but included it
100g soft white breadcrumbs
Brandy
10/150ml pudding moulds
Mix raisons, sultanas, currants, mixed peel and apriocots together in large bowl. Sprinkle liberally with brandy and leave overnight to soak - I soaked here for almost a week and keep stirring
Cream brown sugar, butter and orange and add beaten eggs
Sift plain flour, ginger mixed spice and cinnamon together
Add fruit mixture, dry ingredient mixture, almonds, carrot and breadcrumbs gradually and alternatively to butter and sugar mixture.
Butter moulds thoroughly and line base of each with circle of greaseproof paper. Spoon mixture in and cover tightly with butter aluminum foil.
Cook in bakin pan filled with enough water to come halfway up the sides of the moulds. Bake at 180c oven for 1 1/2 hours. I kept checking to make sure water didnt boil off but was fine and didn't need to top up. When done will be firm to touch and skewer will come out clean. Mine cooked in exactly 1 1/2 hours but guess will differ slightly from oven to oven.
They came out really cleanly in perfect little pudding shapes and were yummy scummy with brandy sauce. Shame I will have to wait until next year to make them again! I was lucky and managed to pick up 150ml moulds so not sure what adjustment to cooking time you would need to make if mould size was larger or smaller.
