Making oven chips and mayonaise

So, we are having Atlantic Salmon fillets for dinner tonight. I would like to make chips in the oven rather than deep fry them and make a mayonaise to go with it.

How do you make your oven chips and own mayonaise or Aoili?

boil them first for a bit. then oven bake. head on over to taste.com.au there is heaps of recipes on there for oven baked chips

for the chips i just cut into wedges, splash some oil over then and some salt and bake in the oven
