Now that the cold weather has hit, was craving some mushroom soup. Found a recipe online but wondering if anyone else out there makes mushroom soup and if they are able to share the recipe here. Many thanks.
Yum I lurve mushroom soup, DH however hates anything that looks remotley like a mushroom so I usually make this when he goes out. It's creamy mushroom and bacon. Very quick and easy, if you can get nice streaky bacon from a deli then that is even better! It's a women's weekly recipe.
60g butter
1 large (300g) onion, chopped
4 rashers bacon, chopped
1 clove garlic, chopped finely
ΒΌ cup (35g) plain flour
1 litre (4 cups) salt-reduced chicken stock
500g button mushrooms, sliced
1 cup (250ml) light cream
1 tablespoon chopped fresh tarragon
salt and freshly ground black pepper
Melt the butter in a large saucepan; cook onion, bacon and garlic, stirring, for about 5 minutes or until the onion is soft and bacon has browned lightly. Add the flour; cook, stirring, for about 2 minutes or until the mixture is bubbling.
Gradually stir in stock, then mushrooms; bring to the boil, then simmer, partially covered, stirring occasionally, for about 30 minutes or until the mushrooms are tender and soup has thickened slightly.
Just before serving, stir in the cream and chopped tarragon and season to taste with salt and pepper. Simmer, uncovered, until the soup is hot.
Serve soup topped with extra tarragon, if desired.
