I'm subbing too - I really want to start baking every fortnight for DDs lunches/snacks.

I was thinking of healthy type muffins and slices - ill come back and post what things I find that I'm going to try out.

    Good luck!

Nigella's choc banana muffins - uses 3 large bananas for 12 muffins and freeze well. The recipe is on her website.

Zucchini slice done in a muffin tin.

I don't have any kids yet, but I make stuff for DH to take to work. I make a bowl of jelly and I buy a tin of two fruits (he loves two fruits) drain, and divide into snack containers with the jelly. Bit of sugar I know, but easy peasy and yummy.
