    Need tips for Birthday Dinner

    I am cooking dinner for the whole family tomorrow night for Kiara's birthday... I want to put on a huge spread just like the greeks and italians do... but as Im a skip, I don't know where to start!

    I have a roast lamb - PLEASE HELP WITH IDEAS ON WHAT TO PUT ON IT! Chicken to roast... but I am stuck after that... What are your fav roast vegies???

    What should I do for other food... entree, dessert and more ideas to add to dinner!!!

    Roast lamb i cut slits in and push in rosemary paste and garlic cloves, i then drizzle with olive oil and salt and pepper, and roast with onions chopped into quarters.

    Roast chook i either do honey soy basting, or just salt and pepper and then a gravy.

    Roast potaotoes, pumpkin, onion, corn and capsicum

    Desert Pavolova with strawberries and passionfuit or grated pepermint crisp, cheescake, choc mousse, fruit salad, stickey daye puddings.

    You could make a lasgana, patsa carbonarra, pita bread pizza,

    Entree soup, dips and turkish bread, garlic bread, prawn ****tails, finger foods eg mini dim sims and chicken wings etc.

    Starters/ Entrees/ Salads: Chilli and herb ricotta with sliced crusty Italian style bread
    Filo triangles with spinach and fetta
    Yoghurt dip, with a flat bread or homemade focaccia, olive tapenade and flavoured olive oil, also yummy with the lemon potatoes and lamb.
    Mini quiches
    Bocconcini and tomato salad
    Grilled haloumi and bread salad
    Chargrilled vegetable salad

    Accompaniments: Eggplant parmegiano
    Lemon potatoes to go with the lamb, or skordalia (greek mashed potatoes basically)
    Tomato, basil and mushroom dish
    (My favourite roast veges are pumpkin, potatoes, and carrots- in that order to )

    Dessert: Apple strudel served with cream and ice cream
    Bread and butter and berry pudding
    Baked (or unbaked) cheesecake
    Tiramisu

    I am quite sure I have recipes for all these, I went through a list I have, and thought of a couple of others along the way. If you want any of the recipes, let me know, I will type them out later tonight for you.

    For your lamb: smash up garlic, paprika, ground oregano and olive oil. Rub it over the whole thing.
    For the chook: Slice up two lemons, stuff them inside it with some ripped up bread crusts and whole garlic cloves. Lift the skin on the breast, and put a lemon slice in between the skin and the meat, keeps it moist. (This is hilarious, coming from a vegan)
    Roast vegies: Potatoes, pumpkin, sweet potato wedges, lemon wedges (squeeze them over everything then chuck them in to roast too)
    Also do: chunky diced capsicum and zucchini in a baking dish. Top with breadcrumbs and parmesan cheese, bake.

    Also an idea to do a big pre-spread, with a couple of homemade dips, two cheeses, some olives, pistachios or cashews and heaps of crackers (wholegrain rice crackers are always my choice. water crackers also good or verideli soy and linseed, purple pack)
    I would suggest these homemade dips:

    Spinach dip:
    1 clove garlic, 1 cube frozen spinach, 1 handful pinenuts, 2 good dollops yoghurt, all whizzed up in your food processor or blender.

    Broadbean dip:
    1 clove garlic, 1 cup shelled cooked broad beans, olive oil, parmesan cheese, pine nuts. Whizz.

    Dessert? Find a top quality, awesome ice cream, serve it with similarly flavoured schnapps. Quality schnapps. Or, if berries are in season where you are, do a berry and chocolate mousse. Easy as, prepared in advance, let me know if you want the recipe. Was my specialty pre-veganism. Working on a vegan version now!

    Snuggly can you give that recipe for the mousse? DH love mousse, but I am crap at it!!!
