Pineapple recipe idea

Hi Girls!

I have a pineapple and a couple of people coming for brunch tomorrow! Obviously I have more then just a pineapple hehe but was wondering if anyone has any good brunch recipes based around pineapple ...ie pineapple cake.

Cass - I don't have one for a pineapple cake BUT, have you thought about fruit kebabs? It's just various fruit strung on kebab stick things. You could serve on their own OR you could grill them. You could caramlise them a little by sprinkling some sugar on them and then grilling them.

You could grill pinapple rings or pieces - tastes yummy.
