    Pot luck dinner

    I have a friend who is hosting a pot luck dinner tomorrow night and I am all out of inspiration.

    Help!!! please....

    I am working until 5:30 tomorrow so really need something I can make today...eeek...

    A one pot meal??? Something big and hearty? Or light??

    Heartier options
    - beef casserole with dumplings on top
    - chilli con carne
    - pasta - spaghetti bolognese, lasagne


    Lighter
    - roast a couple of chickens with lots of yummy herbs
    - make a few dips and get some yummo crustry bread
    - big potato salad or a macaroni salad
    - green salad
    - caesar salad

    How about:

    Cheesy pumpkin and potato bake
    Chicken Noodle Soup
    Some type of curry? (with rice)

    We do this for a local sporting club each year and I usually make a mild Red Chicken Curry, super easy and tasty!
    I just do a bit of rice too and it's always a winner!

    marinated chicken drumsticks.
    Mini meatballs with some sort of sauce.
    Mini pizzas
    Butterfly and marinate some roast lamb (your butcher can butterfly it) Then bake it

    Thanks ladies

    I have decided to go with a warm potato salad, we will have it for dinner tonight and I will make a double batch for tomorrow.

    Great ideas here, will be coming back next time
