Spaghettini
Punnet Cherry tomatoes - halved
lamb strips (however much you desire, i usually use 300g for 2 serves)
rocket (again depends on your taste, I use a large handful)
teaspoon of dried chilli flakes
1 garlic clove - crushed
parmesan to taste
cook spaghettini al dente.
stirfry lamb strips in batches until browned and cooked as desired. Remove from pan.
Add chilli flakes and garlic, stir fry 30 secs, add cherry tomatoes, cook 30 seconds, return lamb to pan.
Drain pasta, reserving 1/4 cup of the water, and add to pan along with water.
Add Rocket, mix all together. Take off heat, add parmesan to taste and serve.
Yummo and very healthy. Takes 8 mins (that's how long pasta takes to cook!!).
