    REALLY NICE Fruit Loaf!

    I am always on the hunt for nut free / suitable for Kindy lunchbox food ideas, so we cooked this today and it was a HUGE hit with the children and with me and DH!

    It is actually from the Wiggles cookbook, LOL! Don;t be put off by the All Bran content.....it is truly delish!

    Fruit Loaf ("Jeff Cake" from the Wiggles Cook Book)

    1 cup sultanas
    1 cup soft brown sugar
    1 cup All Bran cereal
    1 cup milk
    1 cup self raising flour
    1 apple, peeled, cored and grated
    1 teaspoon ground cinnamon

    1. Place sultanas, brown sugar, All Bran and milk in a large bowl, and combine well.
    2. Cover and leave to soak for at least 4 hours
    3. Preheat oven to 180`c
    4. Add flour and apple and cinnamon and stir well to combine
    5. Pour into a greased loaf tin
    6. Bake for about 50 minutes
    7. Remove from oven and allow to rest for 5 mins before turning out onto a wore rack to cool

    Note: I have yet to make a second batch, but when I do I plan on cooking this mixture in muffin tins to see how that works........I will update when I do!

    Pity i hate sultanas with a passion....wonder what it would be like with out them?

    Kim, I am not a huge fan of sultanas myself to be honest, but these really plumped up nicely and the overriding taste is apple and cinnamon.......

    Maybe try it without the 'tarnies and see? Let us know!
