Chicken stir fry? Chicken curry? Chicken pasta (with cream sauce, yummo)? Or for really easy, just marinade in honey soy, or any other flavour sauce, and fry up, do some rice and salad to go with it.
You can do baked chicken risotto, brown the chicken. Put 2 cups arborio rice in an oven container pot with 4 cups chicken stock, 1/4 cup dry white wine (optional), juice of 1 lemon, 2 cloves garlic, salt & pepper, stir together. Then put chicken on top & pop in the oven on 180 for 20-30 minutes or until the rice has absobed all the moisture. Serve with steamed veges.
