I'm looking for some recipes using Cannellini Beans. Already got soup on for tonight, so not soup but something else. Vegetarian is good but not too many 'unusal' ingredients cos i am hoping to cook from the cupboard, and local shop is a bit 'hit and miss'.

I have a heap of vegies here, tinned tomatoes, red lentils, chickpeas, bread crumbs, eggs
Cook up onion and garlic in olive oil, throw in a bit of white wine, a tin of cannellini beans, a tin of tomatoes, leave on the stove to reduce for about 20min - voila! Yum! Add some cracked pepper and salt to taste.
Cheesy Mexican Muffins
1 x 400gm can cannelini beans (drain & rinse)
3 eggs
1 T. oil
1 tsp. baking powder
1/3 c. almond flour or meal
1/4 c. reduced fat sharp cheddar cheese (shredded)
A few sliced pickled jalapeno pieces (the more, the spicier!)
1 & 1/2 tsp. chili powder (to taste)
1 Tbsp. dried chives
3/4 tsp. salt
Preheat oven to 180. Spray a 12 ct muffin tin with olive oil spray (or use nonstick). Pour all ingredients into food processor and blend for about 2 minutes. Pour batter evenly (about 1/3 of the way) into muffin tin. Sprinkle the tops of each with about 1 tsp. additional shredded cheese. Bake at 180for 18-20 minutes.
I cook up a tin of tomatoes with chilli powder, cumin, garlic, dash of raw sugar, dash of salt then add the beans. Heat through, then mash the lot with a potato masher. We fill our tacos with the bean mixture, english spinach or cos lettuce, grated carrot, diced cucumber, diced capsicum, sunflower sprouts, mashed avocado (and hot chilli sauce for the adults).
I often use them in place of mashed potato. Heat gently until very soft then mash/smash with olive oil, lemon, pepper and flat-leaf parsley. Great with steak, chicken or vegie stew/casserole - just about anything!
check out veggie num num, BEST vegetarian recipes around! Type in the ingredient and it brings up the recipes that suit. I also make veggie sausage rolls with beans, nuts and other bits and bots, i think there is a recipe on veggie num num for that too!
we do a cannellini bean and sausage dish. fry some onion, garlic chilli and rosemary, brown it off, throw in the sausages (italian style yum yum) and then when that is browning off, throw in the beans (if from a tin drain first). and let it simmer for however long you like! yummy yummy! our girls love it too!
another fav is as a salad. so can of the beans (drained!) mixed with finely chopped garlic and onion, some parsely and whatever herbs you might have in the garden with some salt, chilli and good lashings of olive oil. this is super super yummy on toast OR stuffed into a french loaf....yummy!
Another sausage n beans maker here - I often use this for any barbecue leftovers too. Fry an onion or two (the more onions that go in, the sweeter the dish will be), then throw cooked chopped sausages (or leftover patties, steak, etc, chopped), 2 or 3 small cans of chopped tomatoes, some mixed herbs, a good heavy slug of worcestershire sauce, bit of tomato paste and some beef stock powder, then simmer for a while until the tomato flavour turns rich. Then add as many cans of beans as you fancy - I often throw a can each of cannellini and kidney beans in. Serve with rice or mashed taters because it has quite a rich flavour.
I tend to add cannellinis in to most of my chicken based casseroles and kidney beans into my beef/lamb ones.
