I dont have a favourite zuchini recipe but when our neighbours give them to us I either make fritters or I add to spaghetti (grated) or sheppards pie (grated) or quiche or something.
I'm sure that someone will post a delicious zucchini slice recipe, but I love it simple, a zucchini cut in half longways, lie them in a tray insides facing up, cover with salt, pepper and olive oil and bake. YUM. Seriously, my dh didn't like zucchini, and I gave him this and he loved it.
ETA: Oh yeah, and you can grate it and add it to pretty much anything.
8 medium zucchini's
1/2 cup bread crumbs
1 clove garlic
1 egg
1 tbsp olive oil
salt & pepper
scoop out the insides of the zucchini's. Chop the insides of the zucchini finely, mix it together in a medium bowl with the rest of the ingredients. Pop mix into the zucchini shells. Lay on a backing tray. If you are diary friendly you can sprinkle some parmesan cheese. Bake in a moderate oven for 30 minutes.
Zucchini Bread
3 cups shredded zuccini (around 3 medium)
1 cup brown sugar
2/3 cup oil
2 tsp vanilla
4 eggs
3 cups wholemeal self raising flour (you can use white self raising if you like)
1/2 tsp salt
1 tsp cinnamon
1 tsp cloves
1/2 cup chopped nuts (Optional)
2 tbsp ground linseeds (optional)
1/2 cup mashed sweet potato (optional)
Mix all ingredients together well. Bake in 2 greased bread pans at 350 degrees for around an hour.
I often will not put all the oil in, or use rice bran oil because its healthier. I add all the optionals for weeks when my girls have a terrible diet... so I know that this has some goodness in it.
ETA: I add grated zucchini to heaps of food to bulk it up as well. Anything with minced meat can hide zucchini. Actually yesterday I made homemade pizzas and since the girls had refused vegetables all day I just mixed 1/2 zucchini, 1 handful spinach and 1/4 cup mashed sweet potato with tomato paste and garlic for the pizza sauce. The girls had ham pizza with no cheese and didn't realise that they were getting some goodness in at the same time
Preheat oven to 170?C. Grease and line a 30 x 20cm lamington pan.
Fry onion and bacon
Mix zucchini, cheese and oil, cooled onion mixture and stir to combine.
add flour sitfed
add eggs
Pour into the prepared pan and bake in oven for 40 minutes or until cooked through.
SOmetimes i throw in a couple of grated carrots and a tin of corn too
2 zuccs
couple of mushrooms
1 red capsicum
500g tomato pasta sauce
3 spring onions
olive oil
pack of spinach & ricotta tortellini (500g one)
- Heat olive oil in frypan, add chopped zuc, mush & cap and cook until tender (about 20 min for me) with lid on. Add pasta sauce.
- Cook tortellini and reserve 1/2 cup of water.
- Add 1/2 cup of reserved water to frypan, along with tortellini and spring onion.
- Place in ovenproof dish and sprinkle with cheese.
- Cook for 20min on 180 or until cheese is browned.
- Serve with garlic bread.
