    Red face Diabetes Recipes

    Okay ladies, I have been diagnosed with GD so I need to start monitoring what I eat and all that jazz that goes with having GD!!

    I was wanting some good recipes for dinners or anything really?? I need also some finger food recipes/suggestions if possible that I can do for my baby shower in the next couple of weeks.

    My dad is a diabetic (almost 27 years now) and I can tell you from experience that diabetic stuff just do not taste good!! What you can do is use liquid sugar replacements (we have natrene here) to cook and bake. Just be very consious about what you eat, example - low gi and eat regular small healthy meals.
    Something that you can think of for your baby shower is fruit (not to much - fructose) and veg platters/scewers with low-fat yoghurt and creamcheese dips.
    I know this is going to sound stupid coming form someone who has not had GD herself, but just eating healthy (control your carbs) and low-sugar. Do some exercise and monitor & control your bloodsugar levels.
    I'll have a look in my mom's hundreds of diabetic cookbooks for something that does not sound to bad, but do not get your hopes up I would have love to send some to you, but I think by the time they get there, your bub would be born!! But if you are willing to take the change, let me know!

    Ok here goes: (Please note I am Afrikaans, so translating is a B!tch - so please keep in mind)
    These are not that bad
    30 day Health Muffins
    (You can keep the dough in the fridge for 30 days and only make as much muffins that you need)
    125ml sunflower oil
    2 XL eggs (beaten)
    625ml 2% Milk
    250ml Wholewheat flour
    375ml Flour
    500ml bran (semels ?!)
    5 ml Vanilla essence
    5 ml salt
    10 ml bakingsoda
    250 ml pitted dates, chopped

    Mix oil and eggs in big bowl, Add rest of ingredients and mix thru. Cover tightly and leave overnight in fridge. Spoon into muffinpan (2/3 of the hole) bake for 20-25 min at 180 centigrade. Take out of pan and let cool. (about 24 large muffins)
    PER MUFFIN: 547 kj, 15.5g carbs, 3.4g protein, 5.9g fat, 22mg cholestrol, 2.4g fibre


    Peach Cheesecake

    Base: 125g Crackers, fine
    1 ml Liquid sweetner
    50g margerine, melted

    Filling: 250ml Plain low-fat yoghurt
    250g smooth low-fat cottage cheese
    410g peaches in fruitjuice
    5ml liquid sweetner
    15ml gelatine
    50ml fruitjuice
    2 eggwhites, beaten

    Base: mix everything and place in one of those tins (spread lightly with grease) with the loose bottoms. press with metal spoon and cool very good

    Filling: mix yoghurt and cheese till smooth, cut half the peaches in pieces and add to yoghurt mixture. Add sweetner (keep the peache juice)
    make the gelatine, let it cool and add to yoghurt mixture. Fold int he egg whites. Slowly pour into your prepared tin. Cover with clingwrap and leave overnight or for at least 4 hours.
    Then you can put some peaches on top and drizzel some of the juice over as well. You can even put on some whiped cream (diabetic off course)
    Per Slice: 520 kj, 12.3g carb, 5.9g protein, 5.8g fat, 7mg cholestrol, 0.5g fibre

    I have a lot of dinner recipies, but you must tell me what you like. It does not help I post something like chicken and you are a vegan.

    Thanks so much nadine!! We basically live off chicken, mince of any meat and I love to use my slow cooker.
